First made in 1959, Penfolds Kalimna Shiraz is an icon in the field of warm-climate Shiraz. Always ripe, robust and generously flavoured. The Bin 28 is named after the Kalimna vineyard that was purchased back in 1945 and from which the original fruit was sourced from. Today, the Bin 28 is a great example of the Penfolds dedication to multi-region, multi-vineyard blending. The Barossa Valley will always remain an integral part of the Bin 28 blend providing rich, vibrant primary fruit flavours.

The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. This aroma really revs me up, it continues to evolve as time goes by. This wine is alive! Complexity, poise, sinewy acid, fine tannins wrapped around a sleek core of pristine dark fruit. Torbrecks flagship wine, The Laird Shiraz is only produced in exceptional years. The fruit comes from one of the finest Shiraz sites in the Barossa valley; the dry grown Gnadenfrei vineyard dating from 1958. Matured for 36 months in special French barriques coopered by Dominique Laurent, the Laird is the ultimate expression of ultra-concentrated single vineyard Barossa Shiraz.

Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

HIGHBANK VINEYARDS Single Vineyard Cabernet Merlot Cabernet Franc, Coonawarra

The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Aromas of perfumed violets and roses laced with wild berries and juicy cassis are well framed by a backbone of tobacco leaf and musk. The palate is poised, with fruit concentration and silky tannins that spread softly across the palate with unctuous, juicy satsuma plum, mulberry, cherry, and cigar box notes. The well-orchestrated length unfolds fine-grained tannins, wrapping around the palate.

Grenache in all its glory. Red fruits proudly lead the charge: raspberries, cranberries and pomegranate. Fragrant coulis on a summer berry pudding. Ferric notes of steel wool and cordite allude to the iron-rich clay soil upon which the vines prosper in the Barossa Valley. Charcuterie aromas of Jamón ibérico and Mojama dry cured tuna notes add an interesting slightly saline nuance. Rubbed olive leaves, sumac spice and ginger peel aromas round out a very enticing nose.
