The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. This aroma really revs me up, it continues to evolve as time goes by. This wine is alive! Complexity, poise, sinewy acid, fine tannins wrapped around a sleek core of pristine dark fruit. Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

One of the benchmarks of Barossa Shiraz, Peter Lehmann's Stonewell is a classic example of the rich concentrated old vine style. While bold on the palate, there is always an inherent complexity to the Stonewell that enables it to be compared with all of the great Australian wines produced today.

Aromas of perfumed violets and roses laced with wild berries and juicy cassis are well framed by a backbone of tobacco leaf and musk. The palate is poised, with fruit concentration and silky tannins that spread softly across the palate with unctuous, juicy satsuma plum, mulberry, cherry, and cigar box notes. The well-orchestrated length unfolds fine-grained tannins, wrapping around the palate.

Grenache has long been a stalwart of the South Australian wine scene and Penfolds have been blending Grenache with Shiraz since the 1950's. Recent years has seen a growing trend for the luscious perfumed styles like those emanating out of the northern Rhône and the Bin 138 produces a brilliant example. Going from strength to strength, this particular wine is quickly gathering momentum as one of the stand-out releases in the Bin series.<p><b>Please note a limit of 24 bottles per customer</b></p>

Grenache in all its glory. Red fruits proudly lead the charge: raspberries, cranberries and pomegranate. Fragrant coulis on a summer berry pudding. Ferric notes of steel wool and cordite allude to the iron-rich clay soil upon which the vines prosper in the Barossa Valley. Charcuterie aromas of Jamón ibérico and Mojama dry cured tuna notes add an interesting slightly saline nuance. Rubbed olive leaves, sumac spice and ginger peel aromas round out a very enticing nose. Margaret River icons, Leeuwin Estate, have produced a wine of true class here. A great finish to the vintage shows up here with aromas of cassis, redcurrant and chocolate. Sweet ripe fruit on the palate is well matched with toasty French oak and fine tannin.

First made in 1959, Penfolds Kalimna Shiraz is an icon in the field of warm-climate Shiraz. Always ripe, robust and generously flavoured. The Bin 28 is named after the Kalimna vineyard that was purchased back in 1945 and from which the original fruit was sourced from. Today, the Bin 28 is a great example of the Penfolds dedication to multi-region, multi-vineyard blending. The Barossa Valley will always remain an integral part of the Bin 28 blend providing rich, vibrant primary fruit flavours.
