Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Unmistakably, Grange, this 2012 vintage is complex, flamboyant and lifted. An aromatic multi-cultural characteristics. The earthiness is well integrated with the aromas of dark fruits, grounded coffee, red liquorice and black olives, which leads to a firmly structured finish.

Grenache in all its glory. Red fruits proudly lead the charge: raspberries, cranberries and pomegranate. Fragrant coulis on a summer berry pudding. Ferric notes of steel wool and cordite allude to the iron-rich clay soil upon which the vines prosper in the Barossa Valley. Charcuterie aromas of Jamón ibérico and Mojama dry cured tuna notes add an interesting slightly saline nuance. Rubbed olive leaves, sumac spice and ginger peel aromas round out a very enticing nose. Grenache has long been a stalwart of the South Australian wine scene and Penfolds have been blending Grenache with Shiraz since the 1950's. Recent years has seen a growing trend for the luscious perfumed styles like those emanating out of the northern Rhône and the Bin 138 produces a brilliant example. Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

Since the early 90's, Penfolds have been producing Chardonnay from the cool climate region of Tumbarumba. The Chardonnay is elegant with white florals, stone fruits and a great acidity structure. Maturation in French Oak gives the Bin 311 a subtle nutty savoury flavour through and through. A great all season wine for all sorts of occasions.

Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.
