Peter Lehmann The Barossan Shiraz is a complex and layered wine with aromas of lifted cherry and dark fruit combining seamlessly with chocolate and mocha undertones. A full-bodied wine with fine tannins and a soft, supple finish.

Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

This is a sweeter simpler style Tawny, quite fruit forward, lighter in style.

Opus One is the coming together of two of the world's supreme wine figures, Baron Philippe de Rothschild and Robert Mondavi. Opus One began its life in 1979 when Château Mouton Rothschild winemaker Lucien Sionneau and Robert Mondavi's son, Timothy made the partnership's first vintage. Their goal was to create a wine of unparalleled quality that reflected the traditions of both houses. The wine is French in style, but Californian in substance, Opus One is produced with the utmost attention to detail. The 2006 Opus One is a traditional Bordeaux style blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. The wine shows saturated black fruit concentration with flecks of purple in the glass. The nose is one of dark chocolate, blackberry, smallgoods and rose petal. In the mouth, flavours of cassis and coffee with robust plum and cherry are only a small taste of how great this wine will become with careful cellaring.</p>

Most of Daniel Bouland’s old bush vines are rooted in the Morgon climat of Corcelette, in hilly Haut-Morgon to the northwest of the appellation. Within this area, there are several lieux-dits that Bouland now bottles separately, and Bellevue is one of these. It’s a particularly stony (cailloux means stones) southeast-facing site, with plenty of schist running through the granitic, sandy base soil (much like in Côte du Py). The plethora of rock on the surface traps and radiates warmth, and, as a result, this is Bouland’s earliest-ripening site. The vines were planted in 1951 and 1987. This is made the same way as the Bellevue Sable wine—natural, whole-bunch ferment, concrete tank maturation and no fining—though the vines are on different rootstocks (420A rootstock in this case, specifically designed for terroirs that are very stony and have no topsoil). Piper Heidsieck NV is a champagne with great fruit, a good mouthful and a harmonious balance. Fresh fruit dominates the nose, predominantly pear and russet apple with a few hints of citrus fruits such as star fruit. The finish evokes flavours of fresh grapes, and a touch of aniseed, followed by a structured and a full-bodied finish. A juicy, fleshy pear and golden grape texture in the mouth, and the finish narrows to citrus and grapefruit flavours.
