Controlled cool fermentation in stainless steel fermenters results in superb definition and freshness. The pinot grigio (pinot gris) fruit is sourced from vineyards around the enormous Delle Venezie region of North-East Italy. The Sachetto family has been making wine since the 1920s and flourished in Italys postwar boom by producing fresh animated wines with plenty of flavour and definition. Next generation Paolo and Beatrice engage traditional vineyard techniques, modern technology and new outlooks to maintain their reputation as a leading producer.
