Our Koala Gin was inspired by walks through the Australian bush. The fresh, crisp scent of eucalyptus evokes memories of exploring and marvelling amongst nature. As koalas would agree, eucalyptus makes for a refreshing and clean drink. And our Koala Gin is no exception. Traditional juniper berries are balanced with the tasting notes of the native lemon myrtle, marshmallow leaf, lime, cinnamon, and vanilla. Handcrafted in small batches at our distillery, Koala Gin perfectly complements a Sunday Sesh during a hot Aussie summer.

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Animus Test Pressing #3 Natini Non-Vintage

.Animus Gins often carry a trademark citrus-oil element, but this has a very pure oleo saccharum character on the nose. There’s a little pine-like juniper peeking through, while floral and leafy botanicals sit delicately in front. On the palate the Gin is big and full, with heat, spice and sweetness up-front, rippling viscously over the tongue with layers of balanced botanical flavours, finishing bone-dry with a metallic/saline zing. It’s definitely the perfect Martini Gin, and when mixed the natives and juniper shine, with whispers of pine and acacia, saltbush and those coffee-like wattleseed notes. It takes plenty of skill to balance this number of botanicals, and Sarah has just nailed it. Bravo!

You get what you put in—this really is hard to match, and nigh-impossible to pick as a prebatched mix. Pour straight from the fridge or freezer (-15º works a treat, but don't over-chill or it will freeze) for one of the classiest and most authentic Negronis around. It’s certainly got enough flavour to be diluted with tonic or soda if that’s what floats your boat. Fosco Scarselli could hardly have done better!

To paraphrase that legendary tagline, this reaches parts of the mouth wot other gins can't. It's a deep and intense, creamy, full bodied gin in the mouth with a sappy, racy, spicy energy and drive that only the very finest gins can match. It's also super complex with lavender and resin juniper notes, citrus pithy freshness and subtle notes of jasmine and green tea. And then, towards the end, all kinds of spice kicks in with a crack of black pepper warmth, plenty of brown spice and some woodsy bracken from the black cardamom. This spiciness is perfectly balanced by the pillowy, glycerol rich texture.

Together with the rise of Copperhead gin came the growth of bartending.In 2018 world-renowned bartender Marian Beke, owner of the Gibson bar in London, created Copperhead the Gibson Edition. Inspired by the classic cocktail Gibson Martini this edition is a unique savoury style of gin, thanks to the immense flavour palette. Added to the original 5 Copperhead botanicals are not less than 13 carefully selected spices traditionally used in pickling. These ingredients, among which are mace, pepper, cassia, bay leaf, ginger, allspice, fennel and dill seeds are joined by just a touch of eight-year-old Genever to complete this smooth and complex taste.The Gibson Edition can be used to add a pickled twist to cocktails or can be enjoyed with premium tonic water as your new favourite Gin & Tonic. Add a pickled garnish to finish it off.
