Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

The 23rd Street distiller individually infuses ten botanicals including traditional juniper and coriander, complemented by zesty local citrus. On August 8th 1837, the whaler Wolf, an ex-royal navy gun brig, carrying 1,700 barrels of sperm oil, struck a submerged rock to the east of Lord Howe Island. The crew abandoned ship and Wolf capsized and sank in deep water with its valuable cargo and crew's possessions. Thereafter, Wolfe Rock bears testimony to the tragic event.On July 7th 2002, royal navy ship, HMS Nottingham, ran aground on the submerged but well-chartered Wolfe Rock and required towing back to the mainland. The Wolfe Rock stands up to navy strength.
