This botanical gin hails from Kagoshima, Japan, home to both the Komasa Gin Distillery and a tiny type of local mandarin orange called the Sakurajima komikan. Sakurajima is the name of an active volcano in Kagoshima and is where these oranges grow in its volcanic soils and reach sizes of about 4cm in diameter. Each ripe fruit is packed with a mellow fragrance and the thick, sweet taste of citrus. Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting.
