This season’s Adelaide Hills figs deliver more flavour than ever before, providing extra depth and complexity to support a backbone of dry gin, macerated cherries, and vanilla. Cinnamon, nutmeg, cloves, ginger, and a touch of star anise harmonise to create a rich spice hit. As always, it plays perfectly in your favourite Christmas cocktails, like a French 75 – on ice with a glacé cherry, or over Christmas pudding, custard, or ice-cream for a decadently festive dessert. Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. On the palate, the strong peppery pine taste of juniper combines with the citrus flavours and finishes with a super warmth from our spice combination. A Gin full of flavour that won’t disappoint.

Our blood oranges for our 2022 harvest spirit were sourced from a single orchard near Loxton. The oranges were then peeled and distilled with the finest botanicals within days of picking. Cool nights and sweltering days, typical of the region, produce the perfect growing conditions. Juicy, loud, and playful - they are paired with Riverland lemons and mandarins for citrus contrast and depth.

Inspired by classical-style winemaking techniques, where grapes of different varietals are co-fermented. McLaren Vale’s Mediterranean style climate provides vignerons the perfect conditions for low acid, full bodied fruit. Textured and lifted, with notes of violets, elderflower, raspberries and a distinct piney juniper backbone, the perfect integration of gin botanicals and grape maceration.
