Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. Liqueur of the Illawarra Plum is rich, velvety & smooth. The consistency and taste is similar to that of a Port or Sherry; perfect for sipping neat after dinner with dark chocolate or enjoyed over a scoop of ice cream. The rare, native Illawarra Plum (Daalgaal) is hand foraged from along the coastline. Following in-house fermentation and distillation, the spirit is barrel aged on the plum skins, amplifying the flavour profile.

Tasting note: Made from 100% Arabica beans (reportedly, some other brands rely on artificial flavouring). Fabulous burnt umber appearance is thick and glass staining. Issues aromas of freshly roasted coffee beans, dark chocolate and vanilla. The tequila base is more salient in the mouth, with a creamed-up texture that’s akin to coffee flavoured milk with a splash of tequila and dark chocolate for good measure.
