Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. Liqueur of the Illawarra Plum is rich, velvety & smooth. The consistency and taste is similar to that of a Port or Sherry; perfect for sipping neat after dinner with dark chocolate or enjoyed over a scoop of ice cream. The rare, native Illawarra Plum (Daalgaal) is hand foraged from along the coastline. Following in-house fermentation and distillation, the spirit is barrel aged on the plum skins, amplifying the flavour profile.
Southern Comfort Whiskey Liqueur
In 1874 M.W. Heron, a bartender, developed Southern Comfort in his bar near La Rue Bourbon in New Orleans and first served it in traditional fashion from a whiskey barrel. In 1934 after a short break in production due to Prohibition, Southern Comfort introduced their current distinctive label featuring the now famous Currier and Ives lithograph of a Southern plantation house on the banks of the Mississippi. The plantation is known as "Woodland Plantation", built in 1834. Southern enthusiasts can visit the newly renovated mansion, which now operates as a nine bedroom country inn. Southern's identity as a bourbon lies only in its origins. Its inception was in an awful whisky batch that Heron was attempting to improve. Actually, Southern Comfort was originally a Peach Liqueur, and one of the few peach liqueurs on the market. Produced using neutral spirit and over 100 ingredients, the final liqueur matured for eight months prior to bottling. Since then the formula has changed and Southern is now branded a 'whiskey liqueur'. Sweet and rich with a molasses background and faint medicinal flavour, it's America’s “Take it easy Drink”. Nixta Licor de Elote Corn Liqueur
Nixta Licor de Elote Corn Liqueur is made from a base of tender, ancestral cacahuazintle (kaka-wha-sint-lay) maize, grown in the high valleys and foothills of the Nevado de Toluca volcano. Nixta is produced at the Destilería y Bodega Abasolo, where they honour the Mexican culture of corn and the ancestral craft of nixtamalization—a 4,000 year old Mesoamerican cooking technique that uncovers the deepest flavours and aromas of maize. To create Nixta, the best tender corn of the season is macerated in an exquisite corn distillate and sweetened with clarified sweet wort—both produced from ancestral cacahuazintle grown near the distillery at a height of more than 7,000 feet above sea level. Pure cacahuazintle corn is used in two different stages of development: Cacahuazintle sweet corn is macerated and prepared to extract all its delicate flavour and ripe, cacahuazintle kernels are nixtamalized to produce a sweet wort and alcohol. Together these ingredients make Nixta Licor de Elote into a flavourful, versatile liqueur that is true to its origin. Aromas of cornbread, caramel and popcorn lead to more flavours of buttery popcorn on the palate with a toasty caramel popcorn finish.
