Covert liqueur was born from a desire to bring the fragrant warmth and complexity of three ingredients together in a chord of liquid harmony. Using just fig leaves, spring honey and cognac we capture a flavour in essence which is at once evocative, suave and richly perfumed. Fig trees grow abundantly in the Cognac region of France – adorning the edges of vineyards, sporadically appearing in the wild and taking pride of place in private gardens. At the start of springtime, fig trees plump their leaves with an aromatic sap; becoming richly green in colour, whilst wafting the deliciously heavy and sweet aromas of the sun-roasted leaf. To translate this aroma into flavour, we harvest the fig leaves during the brief period where they are at their most aromatic. They’re then air dried, lightly roasted by hand and finally transformed into this bright liqueur after adding just the two other aromatic ingredients, and a small amount of cane sugar to balance the sweetness. To the nose – Covert has a deep musky aroma, balanced with the brightness of fruit. On the palate it has notes of jammed figs, countered with dry tones of grilled almonds and rye. The aroma of honey lingers, contrasted with a teasing bitterness on the tongue. It is perfect served as a digestif – neat or on ice.

Since then, it's become an icon - as Australian as meat pies and Vegemite. So how better to celebrate our nation's signature sweet than to imbibe it in liquid form? Our lamington liqueur combines notes of chocolate, vanilla and coconut, blended in our sugarcane spirit and for today's modern rebellious spirits - boosted with a dollop of sweet strawberry jam. Naked Maraschino is an intense cherry liqueur that fuses traditional Italian Maraschino flavours with a smattering of Australian desert peaches. This luxurious liqueur is the result of over two years of experiments and trials. Many cherries were harmed in the process and White Possum make no apologies for their actions. Their final recipe goes something like this. First, they crush a ridiculous number of sour cherries into a paste, then slowly ferment the mixture over many weeks to extract those deep funky cherry flavours. This 'cherry wine' is then distilled in a pot still where we remove the sharp 'heads' and the lousy 'tails' of the distillate. From there, they let it rest and age in a small vat until the flavour mellows a little. Then they add a rich infusion of quandongs, a semi-sweet indigenous ‘peach’ that contributes a distinctly fruity aroma, and a couple of other herbs and roots before letting all the flavours rest further and marry together in harmony. Contains no artificial colours, flavours nor preservatives. All of White Possum's liqueurs, including Naked Maraschino, are bottled in recycled glass spirit bottles where possible. These bottles, harvested from a network of bars, are given a rough massage to strip the labels off, then a hardcore rinse, sanitisation and a polish before being revived with a new liqueur filled life.

Hobart Whisky Tasmanian Whisky Liqueur is a beautiful blend between their Single Malt and Tasmanian Manuka and Wildflower honey, orange zest, and spice. Sweetness is driven by the honey which is balanced by plenty of zesty orange peel notes. The variety of spice drives depth and complexity without overbearing. A long finish, with the spices and orange zest pleasantly lingering. The 35% abv allows for the single malt to come through, best served with ice to chill, perfect in a cocktail with tonic, or the base of a hot toddy with warm water, honey and lemon.
