High flavour, full bodied, Rum made with Organic Molasess that is all natural with no additives. Nil Desperandum; the Latin translation of ‘Nothing to Despair’ and what would a century later become the uniquely Australian expression of easy-going optimism – No Worries. We just love that. It not only sums up the Sunshine Coast – it also gives you an idea of who we are and why we do what we do. Our Inspirations are the cane fields of the Sunshine Coast and the world’s best rums distilled in the Caribbean since the 1600’s. Sugar cane has been growing in our region for over 150 years and it’s well and truly time Australia had a rum the equal of the world’s best. Using Australia’s only commercial quantity of organic molasses, the finest methods including natural ‘wild’ fermentation, and our bespoke German copper stills, every bottle of Nil Desperandum is produced with Love, Art & Science. Our second limited edition numbered release. Each bottle one of 1181. During the month of February 2020, the world was changing rapidly. Whilst most of the world was concerned about a new virus, our distillers were working hard in the Distillery on different yeast strains, alcohol content from fermentation, head and tails cuts, types of oak and seasoning of barrels, with a view to understanding what our future final rums might look like. While Barbados and Jamacia were the original inspiration, it was always known that local factors would be what made us unique. The resulting spirit was aged in old French Oak red wine barrels that were re-coopered to 100L and seasoned with port.

Ron Botran 18 Year Old Solera 1893 Dark Rum
A rich, warming Guatemalan rum from the Ron Botran selection. Sitting at the top of their range, this features rum aged up to 18 years in a Solera system with American oak, Sherry and Port casks.This rum has aromas of dried fruit and crushed nuts covered in honey. This rum has developing coffee bean notes with consistent raisin and caramel notes.The Botran family is commonly known for sugarcane production in Guatemala, but in 1939 they decided to begin a journey by establishing Industria Licorera Quetzalteca. The five brothers agreed that the ultimate place to age rum in Guatemala was Quetzaltenango. Since that day they have been involved in all the details regarding their rum production. Although the nurturing process has evolved, it all began with the nurturing process called Sistema Solera. This process implies the integration of young and old rums, as they mellow for years in white oak barrels. They are the first family that produced Guatemalan rum, nowadays they continue producing one of the worlds finest quality rums. Solera 1893 and Reserva high quality rums have won many worldwide awards for their intricacy, profundity and signature sweet flavour.
