Our Inspirations are the cane fields of the Sunshine Coast and the world’s best rums distilled in the Caribbean since the 1600’s. Sugar cane has been growing in our region for over 150 years and it’s well and truly time Australia had a rum the equal of the world’s best. Using Australia’s only commercial quantity of organic molasses, the finest methods including natural ‘wild’ fermentation, and our bespoke German copper stills, every bottle of Nil Desperandum is produced with Love, Art & Science. Our second limited edition numbered release. Each bottle one of 1181. During the month of February 2020, the world was changing rapidly. Whilst most of the world was concerned about a new virus, our distillers were working hard in the Distillery on different yeast strains, alcohol content from fermentation, head and tails cuts, types of oak and seasoning of barrels, with a view to understanding what our future final rums might look like. While Barbados and Jamacia were the original inspiration, it was always known that local factors would be what made us unique. The resulting spirit was aged in old French Oak red wine barrels that were re-coopered to 100L and seasoned with port.

St Lucia Distillers Group of Companies is a small rum distillery situated in the scenically beautiful and agriculturally rich valley of Roseau on the Caribbean island of St Lucia. It produces some of the world’s best rums. A traditional spanish style rum, the HMS Princessa blends Coffey still spirits pulled off the lower sections of the still, resulting in a robust and complex flavor profile. HMS Princessa is aged from 5 to 9 years in Bourbon and Port casks, before being blended together by our Master Blender. EYE: deep mahogany color. NOSE: honeyed raisins on the nose and a hint of vanilla and tobacco. PALATE: sweet and smooth, with intense brown sugar, crème brulee tones, balanced by dry toasty oak. Whilst the folks at Hunter Laing are specialists in blended and single malt scotch whiskies, over the years they have been fortunate enough to acquire stocks of aged rums, from places such as Guyana and Jamaica and are pleased now to offer some of these to customers on the basis, of course, that they meet the same exacting quality standards required for their bottlings of whisky. In the 17th and 18th centuries, islanders referred to their locally made distillates as Kill Devil. Whilst today many of the old superstitions have gone, the Caribbean is still the source of many exotic rums. The Kill Devil series showcases the quality and diversity of rum from the Caribbean and further afield – single casks are specially selected for shipment to Scotland, to be carefully and traditionally bottled by hand. The single cask bottlings are presented in gift tubes and the rums are bottled at 46% or at natural cask strength – also referred to as navy strength in the rum world – not chill-filtered and without colouring.
