818 Tequila Anejo Reserve

818 Tequila is a brand that prides itself on working closely with local, family-owned farms in Jalisco, Mexico to deliver the smoothest most natural and best-tasting tequila possible. With a commitment to using only the highest quality ingredients, 818 Tequila ensures that every bottle embodies the essence of craftsmanship and authenticity. The ethos of 818 Tequila goes beyond just creating exceptional spirits. The brand recognizes the importance of sustainability and transparency throughout its supply chain. Taking inspiration from the area code 818, which represents their home, they also acknowledge that the earth is home to all of us. With this in mind, 818 Tequila places great emphasis on sourcing their agaves responsibly and ensuring the production process is environmentally friendly. The journey of 818 Tequila begins with the skilled jimadores, local agave farmers from the Tequila region. These experts identify the optimal conditions for growing agaves in the Los Valles region, patiently waiting for at least 7 years until the agaves reach peak maturity. Once harvested, the agaves undergo a slow cooking process that lasts for over 30 hours. Large stone Tahonas, weighing 800 kilograms each, are then utilized to crush the cooked agaves. This age-old technique allows for the extraction and collection of the juice, preserving the authenticity and tradition of tequila production. The extracted juice, known as "mosto," then goes through a natural fermentation process. Unique wood and stainless steel tanks are utilized, and the fermentation is enriched by using leftover agave fibers from the tahonas. Native yeast is added to enhance the aromatic expression, resulting in a deeper and more nuanced flavor profile. The tequila is distilled in hand-built copper alembic pot stills of the highest quality. It undergoes a double distillation process, carefully monitoring the alcohol volume to achieve the desired smoothness that 818 Tequila is known for. To further enhance the character of the tequila, it is aged in superior oak barrels. The Reposado and Añejo expressions are aged in both American and French oak, allowing for a harmonious fusion of flavors. Expert blending techniques ensure that each bottle of 818 Tequila embodies the iconic taste that the brand is celebrated for - smooth, versatile and sippable. The 818 Tequila Añejo Reserve is not only known for its exceptional taste but also for its distinctive bottle shape. The heart of Don Julio Tequila lies in its production process, which combines time-honoured techniques with modern innovation. The agave piñas are slow-cooked in traditional masonry ovens, allowing the sugars to develop and create a rich and complex flavour profile. After the cooking process, the agave is crushed and the juice is extracted, fermented and carefully distilled to perfection. The result is a range of tequilas that exemplify the essence of their respective expressions. From the vibrant and crisp Blanco, with its notes of citrus and agave, to the aged and refined Añejo and Reposado, which showcase the influence of oak barrels with hints of vanilla and caramel, each expression offers a unique and memorable tasting experience. He didn't own much, but what he did possess was a dream and the singular devotion needed to bring it to life. After sharing his vision with a local businessman, he was granted a loan to start his first tequila distillery, La Primavera. Sitting 6500 feet above sea level in the highlands of Jalisco is where it all began. It's in this extreme climate, surrounded by rich volcanic soil, where the legendary distillery of La Primavera was founded and Don Julio Tequila was born. Since 1947, over three generations of the Jimador families have worked with Don Julio. Their devotion to Don Julio's process and methods is unmatched and their mastery in planting, farming and harvesting agave have been passed on for generations and can be traced back to Don Julio himself. In 2006, Don Julio, with his family, planted their final agave field. In honour of his devotion and craftsmanship, this agave harvest was carefully distilled, barrelled, and set aside for a special use. Now released in commemoration of the tenure of Don Julio Gonzalez’s at the distillery over the last 80 years. To preserve this tequila and the exquisite agave piñas behind it they implemented a Solera aging system. The Solera aging method combines and matures tequilas of different characteristics finished in unique casks, allowing the final agave harvest to remain at the heart of this rare Extra Añejo Tequila. Clase Azul Añejo Tequila

Clase Azul is a Mexican tequila brand that has been sharing the magic of Mexican culture with the world for the past 25 years. The brand was born from a dream to showcase the beauty of Mexican traditions and land. Its iconic decanter, a unique creation made by Mexican artisans, was the starting point of this dream. The name Clase Azul, meaning blue class, was inspired by the blue agave used to make their spirits and the paint on their first Reposado decanter. Despite facing challenges such as natural disasters and financial crises, Clase Azul has stayed true to its ideals and overcome adversity. In 2007, the brand founded Tradición Mazahua, a ceramic workshop where Clase Azul artisans dedicate themselves to creating the brand's decanters as a tribute to Mexican culture. Today, Clase Azul is proud to share the magic of Mexico with more than 55 countries. The brand has transformed into Clase Azul México, but it still preserves the spirit that drives it to showcase the beauty of Mexican culture to the world. Clase Azul México aims to transcend and represent Mexican culture around the world with its exquisite creations and spaces that reveal the heart of Mexico. The agaves used for Clase Azul tequilas grow in Los Altos de Jalisco, a region of red-coloured earth that creates unique properties in the plant. To create their exquisite tequilas, Clase Azul follows a long transformation process that involves slow-cooking the agave piñas in masonry ovens, milling them to extract the sugars, fermenting them with patented yeast, and double-distilling them in copper stills. Clase Azul Tequila Plata is the unaged tequila that captures the notes of the agave, but the journey isn't over yet. The tequila is matured in casks made from oak or other types of wood, allowing it to develop a more complex profile. Clase Azul also honours the tradition of mezcal, which can be made from a wide range of agave species and reflects the soil and conditions that have nourished the agave. The artisanship found in Clase Azul's decanters is a reflection of Mexico's cultural diversity. Each decanter is a creative process that demands artistic drive, technical ability and knowledge passed down for generations. The tequila decanters tell stories through their decoration, while the mezcal decanters display caps decorated with precious artisanal techniques. Clase Azul Añejo Tequila is a tribute to the Mazahua indigenous culture and an expression that truly honours Mexican culture. Its intense amber colour with copper highlights and great body are the result of a magnificent 25-month journey in American whiskey casks. On the nose, Clase Azul Añejo Tequila offers a complex aroma of toffee, cinnamon, clove, roasted hazelnut, Mexican vanilla, orange marmalade, quince and toasted oak. The silky mouthfeel on the palate reveals flavors of nutmeg, clove, orange marmalade and toasted oak. This tequila pairs well with rich cuts of meats such as ribeye, picanha, duck breast or beef ribs accompanied by a robust sauce like velouté, meat gravy or mole. Semi-mature cheeses like brie and camembert accompanied with bread and red berry compote also make a great pairing. For dessert, try pairing Clase Azul Añejo Tequila with bitter chocolate with guava jam or roasted banana. The external beauty of the Clase Azul Añejo Tequila decanter tells the story of its origin. The spirals superimposed on the raw clay symbolize the earth's fertility, while the thin blue line represents the water that gives life to the agave. The piña in the center symbolizes the heart and soul of tequila and the four-petaled flower on the back is the traditional Mazahua representation of the Sun and its fullness in the centre of space and time. The delicate and distinctive feathered design of the Clase Azul family in 24K gold paint adds the finishing touch to this beautiful decanter.

Curado Tequila Blanco - Infusión de Agave Espadin

To make Curado, the distillery uses a blanco Tequila from the Highlands of Jalisco as a canvas, then they infuse the liquid with pieces of cooked Agave. At first the infusions only used Blue Agave from the state of Jalisco, but the project soon evolved to include other varieties of Agave from other regions of Mexico. They want to build bridges, not walls. Curado is an innovative product, full of subtle nuances, continuing to respect the Mexican tradition and culture. Curado Tequila Blanco - Infusión de Agave Espadin has gentle smoke and agave sweetness with a hint of citrus on the palate.
