In 1898, John Duff built the Speyside Distillery, BenRiach. It is one of the few distilleries with its own on-site floor malting and draws its water from the Burnside Springs. A richly sumptuous single malt, interwoven with mellow smoke and a masterful curation of oak. Crafted from a combination of unpeated and peated spirit and four cask matured for at least twenty five years in sherry casks, bourbon barrels, virgin oak casks and Madeira Island wine casks. During long maturation Benriach’s sweet Speyside smoke mellows and integrates with the fruit, malt and oak. After twenty-five years, rich layering develops into caramelised smoke, further enhanced through multi-layered cask maturation. The whisky from each cask type, imbued with particular flavour characteristics, is then expertly married together to create a sumptuous single malt, layered with baked fruit, honey malt and toasted oak spice with a long, rich, caramelised smoke finish. All in perfect balance.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. One of the six classic malts of Scotland, this Whisky is best enjoyed neat or with a slight dash of water.

Thirty years ago, Glenmorangie innovated in the art of extra-maturation, transferring spirit first matured in ex-bourbon casks, into ex-wine casks so that it could gain further layers of flavour. For The Nectar d'Or, the whisky is finished in barriques from Sauternes: the most famous sweet wine of France. The Balvenie create a unique range of single malt Scotch whiskies hand-crafted in Speyside using centuries-old skills passed down through generations. The Balvenie's' process is a combination of expertise, skill and ambition which is the same now as it has been through generations. Balvenie's use of 5 key crafts is key to maintaining their high standards. Home grown barley, craft of the cooperage of the barrels, the malting floor where the grain is prepared, the copper stills that create the base spirit and the malt master who oversees the refining of the end product. The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards. Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Sixteen years of maturation in American Oak casks brings an abundance of vanilla spice and warm honey notes. The finishing in Pineau casks brings energizing grapefruit, geranium, glazed fruit and ginger. This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials. The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and pealed apple skin. On the palate there is an energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger, with a refreshingly concise finish.

The process of Scotland's slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Bottled at the higher ABV of 58.7%, the balance between the subtle flavours imparted from the slow distillation and the power of the un-chillfiltered single malt imparts flavours of digestive biscuits, ripe bananas and a hint of pepper. Lagavulin, pronounced 'Lagga-voolin' (meaning 'the hollow where the mill is') is distinctive and powerful. Once described as 'liquid bandaid' for its strong medicinal character, it is perhaps the most assertive, complex and intensely dry of all the Islay malts.The palate overwhelms like an ocean wave with powerful peaty, salty overtones that re-emerge on the finish. The taste sensation lingers long in the mouth. On a cold wet winters night, there is perhaps no finer tonic than a dram of Lagavulin.

Note: New blue packaging, not old brown packaging. While the twelve year old is a relatively non-descript malt, older Glenfiddich bottlings are now gaining high praise including one award as the world's best single malt Scotch whisky. However, as a representation of the house style, the 18 year old pretty much nails it. Always a centre-piece of the portfolio, the company has further emphasised its place by redesigning the packaging to give it a more superior look than its 12- and 15-year-old stablemates. The Glenfiddich distillery lies on the river whose name it bears. 'Fiddich' refers to the fact that the river runs through a valley inhabited by deers – hence the company's logo which features a stag. A proportion of the whisky in this version of Glenfiddich is supposedly even older than the label suggests. Tasting note: Deep gold colour. Moderate aromas include honey, clove and vanilla laced malt. On the palate, dried apricots and spice are augmented by soft peat, adding depth to the toasty malt. Plush mouth feel.
