Glenfiddich 30 Year Old 'Suspended Time' Single Malt Scotch Whisky

The Glenfiddich Distillery was founded in 1886 by William Grant in Dufftown in the Speyside region of Scotland. The name Glenfiddich derives from the Scottish Gaelic Gleann Fhiodhaich meaning "valley of the deer". Once the spirit has matured, the whisky is cut with pure Robbie Dhu spring water. Glenfiddich has a bottling hall onsite along with a large bottling plant in Bellshill. It is visible in a rocky valley’s many solid strata; laid down over millennia, worn smooth by wind and rain. And with layers comes complexity. Which is why Glenfiddich 40 is so much more than an exemplary single malt. This rare single malt is made through remnant vatting, a pioneering process in which the Glenfiddich malt master carries one batch over, time and again, and marries it with the casks selected for each subsequent release. Cask after cask, season after season, it absorbs the evolving flavours of the passing years. It is time, age, experience accumulated. It’s a unique process that isn’t commonly used. In fact, Glenfiddich is the only distillery that still makes use of the remnant vatting process, which is a testament to the label’s traditional approach to distillation. Part of the time reimagined series from Glenfiddich, the 30 year old release is know as suspended time. Time is often believed to be an irrefutable force. the seconds, minutes, hours fleeting figures of a clock face, slipping steadily away. but in the hands of a maverick, time stands still. This is something our malt master understands implicitly. Thirty years ago, he laid down the spirit to create an exemplary single malt. After three decades of patient maturation, the decisive moment arrived. Glenfiddich 30 is the pinnacle of this process. More than simply a superlative liquid, it is forethought, expectation, anticipation embodied. Three decades, captured. Time stilled, forever. Arrested, and arresting. An experience to savour. Thirty years of Glenfiddich's maverick mindset, suspended in time. Graphic and expressive, Glenfiddich 30 year old’s outer packaging is the capsule which encases the moment of maturation, in all its splendour. The design evokes the image of moving ribbons, each one frozen in time to form elegant cut-out windows, revealing the regal decanter inside. The design’s dynamic lines and complex structure create the illusion that the bottle is suspended, effortlessly, in mid-air. Rich Bronze in colour the nose is an exquisitely structured balance of hearty oak married with sweet, subtle sherry notes. On the palate you will find deep, woody flavours interlaced with delicate floral accents, in a complex combination. The finish is warm, honeyed and exceptionally long-lasting.

The Dalmore 25 Year Old Single Malt Scotch Whisky

The Dalmore distillery was founded by Alexander Matheson in 1839, a merchant adventurer determined to create an exceptional single malt whisky. In 1867, descendants of Clan Mackenzie took control of the distillery. One of their first changes was to adorn every bottle of The Dalmore with the stag – a guarantee of peerless quality. The 12-point Royal Stag proudly adorns each bottle of The Dalmore, encapsulating the distillery’s regal legacy, dating back to 1263. The emblem was bestowed upon Colin of Kintail, the first chieftain of Clan Mackenzie, after he saved the life of King Alexander III of Scotland from the fury of a charging stag. The idiosyncratic collection of stills at the distillery creates a unique new make spirit – robust and fruity, particularly well-suited for longer and more complex maturation. This allows the whisky makers to ensure each cask of spirit reaches its full potential. Richard Paterson, a pioneer in the art of cask curation, was the creative force behind The Dalmore for nearly five decades. He lit the way for current Master Whisky Maker Gregg Glass who continues an unbroken chain of visionary whisky makers, always pushing boundaries to mature the spirit in the rarest and most exalted of casks. Hand selected casks, from the world's finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse. The Dalmore 25 Year Old was first introduced in 2013, following the distillery's tradition of being matured in an extensive selection of casks, The spirts for the Dalmore 25 was initially aged in American white oak, before being hand-divided into 25 year old Palomino Fino sherry butts and first-fill bourbon casks. After these two steps the whiskies are married in carefully selected bourbon barrels before before finished in Tawny Port pipes from Portugal. The nose is full of aromatic exotic fruits, citrus, vanilla pods, treacle toffee and fig cake. On the palate are flavours of Madagascan vanilla pods, thick treacle toffee and chocolate truffles with a finish of maple syrup, dark chocolate and spiced gingerbread.

Soft aromas of vanilla with rich raisin lead the journey of discovery into this single malt whisky, followed by a sweet fusion of fresh apple, lemon and orange. Intense sweet raisin flavours dominate the palate, before giving way to vanilla and dark chocolate, with layers of light citrus zest. The finish is long, rich and velvety to offer a decadent whisky experience that will leave a lasting impression.

Aberlour 12 Year Old Double Matured Single Malt Scotch Whisky

Laphroaig 10 Year Old Single Malt Scotch Whisky

"So consistent is the Laphroaig 10, that this is one of the whiskies I test myself each day with to check that my nose and palate are on song". 95 points - Jim Murray 2022 From the remote island of Islay in the Western Isles of Scotland. Laphroaig, pronounced 'La-froyg', is a Gaelic word meaning 'the beautiful hollow by the broad bay'. The full history of Laphroaig seems to be lost in the mists of time. It's clear that the Irish had been distilling on Islay for many years and that the locals picked up the skills when they left, but because it was illegal the small stills on the farms were rarely discussed - just a nod and a wink in the right direction!What is known, is that the family called the Johnstons started farming there around 1800, and that soon after messers Charles and Willie Doig were asked to do some 'work on a distillery' at Laphroaig. By 1815 Laphroaig's reputation had spread and the tax man was getting suspicious so they 'officially' established 'Johnston & Johnston' - the legend of Laphroaig had begun. Laphroaig is a malt to either love or hate. Full of the smoke and iodine, seaweed character Islay has become famous for, it has spurred some commentators to describe it as 'mouthwash', 'hospital gauze' or at best, 'medicinal'. Suffice to say, this is not a whisky for the faint hearted. Take Laphroaig neat like a stalwart, or with a splash of soft water. Roll it around on your tongue, release the pungent earthy aroma of blue peat smoke, the sweet nuttiness of the barley, the delicate, heathery perfume of Islay's stream and either swallow or spit. The final judgment on Laphroaig must always be left to the individual. Tasting note: Brassy gold. Seems a little tamer than previous incarnations, earthier too with a farmyard edge. Less iodine / elastoplast than before, more peppermint, baked citrus, kipper and lanolin, creaming up towards the finish, trailling off with hints of Fisherman’s Friend. 40% Alc./Vol.

Talisker Storm Scotch Whisky

A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

Ardbeg An Oa Scotch Whisky

Rounded and smoky - like burning Applewood - with creamy toffee, aniseed, treacle and dates. A curious suggestion of juicy fruits, such as peach and banana. With a drop of water, reminders of Ardbeg's classic fragrance lime, pine resin, fennel, saddle soap and tar. A gentle waxiness, like fragrant candle wax, and hints of smoked herbs. An Oa gives a final subtle reminder of the sea with briny notes and seaweed but always accompanied with creaminess. A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet spices (nutmeg & cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a carpenter's workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.
