Tasting note: Matured in first-fill ex-Bourbon barrels for seven years before being transferred to smaller 125 litre Quarter casks for a further two years. The process amplifies the impact of the wood. Fumey alcohol gives way to hints of dried coconut, raisin chocolate, pine needles and a vaguely cider-like fruitiness. It's a big, chewy malt with a fabulous fanning flavour rush and impressive control. Summer pudding and vanilla come through on the finish before the aftertaste ends crisp and pleasingly astringent. The Glenlivet 15 Year Old French Oak Reserve Single Malt Scotch Whisky sets the benchmark for 15-year-old Speyside malts, if not the 15-year-old classification worldwide. This 15 year old expression from The Glenlivet, was matured in French Limousin Oak casks. Limousin Oak is a popular choice for maturation of Cognac and delivers a nose which is rich and oaked. On the palate this whisky opens up fudge and Madeira with apple crumble and Calvados. The finish is long and dry with a peppery note. This is a very sophisticated release from The Glenlivet with the Cognac influence being evident.
Kilchoman Machir Bay Single Malt Scotch Whisky + 2 Tumbler Set
Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occure in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration. Named after the most spectacular beach on Islay, Machir Bay is the flagship of the Kilchoman range. Machir Bay is a unique and complex combination of ex-bourbon barrels and oloroso sherry butts. There is a predominantly ex-bourbon influence on this release which is indicated in the cask influence graph on the front of the carton. The resulting whisky has coastal peak smoke, giving way to fresh vanilla, tropical fruit, and butterscotch with herbaceous undertones and waves of stone fruit and citrus sweetness. Distillery: Laphroaig is blessed with its proximity to the Kilbride Stream, they've got a plentiful supply of peaty, mineral-rich water. The water is used as a coolant throughout the whisky-making process and in fact is one of Laphroaig’s main ingredients, lending soft, peaty, flavoursome notes to our whisky. As for the soil, well, their peat bogs are unlike anything found on mainland Scotland. Unlike other scotch producing sites, there are no forests on Islay, so the plants that fuel the peat are primarily heather, lichen, and moss. These give Laphroaig its herbal, qualities that are distinctive to the island, and the whisky. Also in the mix is old sea vegetation from when Islay was under water. The influence of this on the peat gives Laphroaig its maritime character and is one of the biggest points of difference from mainland peat. Nose - Iodine, Burnt Wood, Vanilla Fudge Lightly peaty with notes of iodine and burnt wood. Floral green malt, sweet candyfloss and vanilla fudge, and subtle blueberry and raspberry accents. GlenAllachie 10 Year Old Strength Single Malt Scotch Whisky (Batch 10)
Product Information: GlenAllachies very first bottling of The GlenAllachie 10 Year Old Cask Strength happened by chance. In 2017, whilst reviewing parcels of stock from 2007 and 2008, their Master Distiller Billy Walker was so delighted by the balance and depth of the samples that he immediately decided to add a younger expression to the core range. Their fourth batch was awarded ‘World’s Best Single Malt’ at the World Whiskies Awards 2021, so the bar has been set high as they introduce their tenth release. The GlenAllachie Cask Strength Batch 10 is bottled at 58.6%, non chill filtered and natural colour. Master Distiller Billy Walker was responsible for the production of this unique malt. It is a combination of several cask types including ex-sherry Pedro Ximenez and Oloroso, red wine casks and American virgin oak barrels with medium toasting. Makers: In 1967 The GlenAllachie was the fourth distillery designed by William Delmé-Evans and built by Mackinlay McPherson (the distilling arm of Scottish and Newcastle Ltd). It was designed to be almost entirely gravity-fed to run on reduced energy. In 1968, the distillery began its first production run. Fast forward to 2017, Scotch whisky industry legend Billy Walker came together with his business partners Trisha Savage and Graham Stevenson to acquire the distillery from Chivas Brothers, bringing with them extensive industry expertise. Just nine months after taking ownership of The GlenAllachie, they launched their first core range single malts. Having previously been used to create premium blends, this marked the first-ever range of single malts to be released by the Speyside distillery. In 2021 their Master Distiller, Billy Walker, was inducted into Whisky Magazine’s prestigious Hall of Fame: a permanent tribute to individuals who have made a lasting contribution to the world of whisky. This move has enabled them to create a more complex, flavourful distillate. In terms of wood management, GlenAllachie have a deep appreciation for the flavour contribution superior casks can offer. By allowing the spirit to interact with multiple wood types across its maturation journey is essential. Every cask quietly aging in the on-site warehouses and meticulously monitored by Billy Walker and his expert team throughout this process, ensuring the whisky is bottled at its optimum. Lagavulin 8 Year Old Single Malt Scotch Whisky
An unusual age statement is inspired by Alfred Barnard's visit to the distillery in 1887 which became part of his book, “The Whisky Distilleries of the United Kingdom”. According to Diageo Director of Whisky Outreach, Dr. Nick Morgan, “At the end of the tour, he was given a taste of the whisky…he tasted an eight-year-old Lagavulin, which, of course, remember at the time was actually quite old…whiskies were considered to be venerable once they got around six years old in the 19th Century,” Morgan said in an interview with www.whiskycast.com. “He declared that whisky to be exceptionally fine, so our mission with this bottling was to find an exceptionally fine eight-year-old liquid which we thought Barnard would quite like if he were to be back here tasting it today.” Tasting note: Very pale straw gold showing considerable legs. Powerful and complex aromas include cocoa, sea spray, white pepper, dilute Elastoplast and lanolin followed by hints of citrus zest. Several minutes air contact accents the latent malt as well as dark chocolate. Concentrated but also surprisingly soft; almost creamy with grassy malt and a juicy vanilla, kelp and peppermint finish that goes long into the aftertaste.
