Sánchez Romate NPU Amontillado show vivid amber tones, almond aromas with a touch of oak and the taste is dry, persistent and unusually delicate.

Refined and balanced on the palate, flinty and mellowed tannins meld with concentrated red berry fruit and lifted mineral freshness. Nuanced flavours of tobacco lead to a focused, dry finish. For some, Dows 20 Year Old is the perfect example of an aged tawny Port, an elegant balance of mellow fruit combines with the complex characteristics from prolonged wood-ageing.

Fonseca is a port house with a long and proud history that includes the owner escaping Portugal in a wine barrel due to political allegiances. Their Late Bottled Vintage is always a wine of firm structure but with a luxurious mouth feel and lush finish.

Kalleske JMK Vintage fortified has been made in honour of John Malcolm Kalleske who has hand tended the vineyard where the fruit for this fabulous VP is sourced from for over 50 years. Kalleske's first attempt at a vintage fortified has seen it excel beyond belief. A very 'serious' style fortified without any of the candied sweetness sometimes evident in Australian 'ports', but a lip-smacking sweet/savoury blend that is at home more in Portugal than in the Barossa Valley. Outstanding.

Gilles and Shaun, winemaker and bartender, were first united over their love of the negroni. They were both convinced that the sweet vermouth used in the classic should never overpower the gin. Accordingly, they created the Sweet to be perfectly balanced both as a vermouth and as a component of the cocktail.
