Gilles and Shaun, winemaker and bartender, were first united over their love of the negroni. They were both convinced that the sweet vermouth used in the classic should never overpower the gin. Accordingly, they created the Sweet to be perfectly balanced both as a vermouth and as a component of the cocktail.

Made from Muscadelle grapes and previously known asTokay this wine is the foundation of Stanton & Killeen Topaque range exuding lively flavours and great versatility. White gold in colour with aromas of quince jelly, cumquats and dried fruit. The palate has notes of zesty lemon peel and butter menthol which combine to reveal a very silky mouthfeel and long finish.

Widely regarded as one of Australia's benchmark fortified wines, the Penfolds Grandfather Rare Tawny rightfully lays claim to such a title. High quality blending stock has been lovingly matured in small oak casks, and creates a wine of immense complexity and depth.

'The Tawny' Port is Graham's signature blend matured for 7-9 years in seasoned oak casks. It has a deep golden-amber colour and a complex nose full of orange peel, cinnamon, prunes, raisins and figs followed by a full body with generous flavour and a long, clean finish.

A luscious palate of apricots, honey & citrus flavours combines with botrytis sweetness, finishing with an alluring freshness. Barbadillo and their quality Sherry's have been an integral part of the Jerez region since 1821. Located in the south-western area of Spain and apart of the all important 'Jerez Triangle', Barbadillo provide not only some of the very best Sherry here in Australia, but some of the best value for money. This Principe Amontillado is a quirky style that is in fact a fortified aged Manzanilla. Plenty of spice, hazelnut and almond meal characters. The finish is wonderfully long and exceptionally rich for an Amontillado.

Mr Pickwick's Particular Tawny is a mellow and well rounded wine, matured in small oak casks to enrich the bouquet and flavour - this wine has a rich deep colour and palate. Perfect when paired with some flavoursome cheese or simply on its own to finish off a great meal.

Aromas - Lifted aromas with classical aged oak rancio characters, fruitcake, dark chocolate and hints of roasted walnuts all integrated together seamlessly with a freshness contradicting age. From the stellar Equipo Navazos stable, this Manzanilla comes from a 60-strong cask selection made by Navazos founders Jesus Barquín and Eduardo Ojeda that was plucked from the production of La Guita, one of the most famous (and finest) Manzanilla producers (and where Ojeda oversees production in his role as the technical director of José Estévez). As always, this current bottling was drawn from its barrels en rama (directly). This is how Manzanilla used to be bottled before sterile filtering became the standard in Jerez. The current batch was bottled in March 2024. It’s a wonderfully potent and briny yet seductive wine with a deep, silky texture and plenty of sustained, tangy drive. Four and a half years under flor and gentle bottling direct from cask has also delivered a vibrant orange/gold colour and some nutty development. It’s a much deeper colour than most other Manzanillas on the market (which are typically very clear due to their youth and sterile filtration). That makes this unique in comparison to other Manzanillas in its price range. It remains light years ahead of more common, conventional Manzanillas.

Kalleske JMK Vintage fortified has been made in honour of John Malcolm Kalleske who has hand tended the vineyard where the fruit for this fabulous VP is sourced from for over 50 years. Kalleske's first attempt at a vintage fortified has seen it excel beyond belief. A very 'serious' style fortified without any of the candied sweetness sometimes evident in Australian 'ports', but a lip-smacking sweet/savoury blend that is at home more in Portugal than in the Barossa Valley.
