Rock Angel is made from grapes primarily from the Vineyards of Chateau d’Esclans in addition to the most choice Vineyards in the vicinity of the Esclans Valley and nearby in the Cotes de Provence region. Harvesting is conducted in the morning for Estate cultivated grapes and during the night time for sourced grapes. Rich and racy on the palate. The use of partial oak aging adds a creamy feel and texture to this wine, and the flinty minerality embues it with another layer of complexity. Delicate red berry aromas with mineral notes, along with floral hints and a subtle spice. Powerful and elegant. Firm acidity with a long and silky finish.

We think great Rosé should offer appealing texture as well as bright fruit flavours. The use of a small portion of old oak in the wine helps to achieve textural interest.Pale onion skin colour. Cranberry, redcurrant, white strawberry and lemon zest. Bone-dry and savoury, showing tart red fruits and orange rind, balanced fusion of tannin and acidity creating a savoury, mouth-watering finish.

We select the fruit from the cool south-facing slopes high in the Adelaide Hills. Sweet strawberry, cherry and spice aromas follow through to the palate, where the lively bubbles add lift and balance to these fruit flavours. This wine has wonderful length and supple mouth feel. Winemaking: The fruit is all hand-picked and whole bunch pressed into tank for fermentation. A remaining parcel of Pinot Noir is fermented as red wine in open top fermenters with daily plunging. Fermentation lasts around 12 days and the wines go through malo-lactic ferment over winter to soften the acids. Blending then takes place, combining the clear base wine with around 4-7% of the red wine to achieve the pale pink colour and fruit lift that is signature of this wine. Try with tuna sashimi, salmon or chilli prawns.
