Jansz Tasmanian Premium Brut Rose Non-Vintage

Jansz Tasmania is a luxury sparkling wine house, solely devoted to the art of sparkling winemaking since 1986. Location is integral to growing outstanding fruit and only Tasmania can boast such idyllic conditions. Put simply, it is the perfect place to craft premium sparkling wines. By allowing nature to do the work, the wines are naturally expressive of Tasmania's pure, pristine environment. Jansz is lead by vigneron, Jennifer Doyle whose viticultural journey began 28 years ago in her home state of New South Wales. Whilst Jennifer’s career has seen her traversing cool climate regions of Orange, Pemberton and Margaret River, the last 12 years have found her firmly planted in the Jansz ‘Pontos Hills’ and ‘Woodside’ vineyards in southern Tasmania. Sustainability is important to Jennifer, in life and work. She began exploring alternative methods of managing pests and diseases early in her career, realising the multi-faceted value of protecting and enhancing biological diversity. Jennifer’s 2012 Dr Don Martin Sustainable Viticulture Fellowship study tour further inspired this pathway. In 2017, Jennifer was awarded ‘Viticulturist of the Year’ at the Australian Women in Wine Awards, for consistent performance, innovation and best practice methods to achieve results. The grapes are sourced from selected cool climate vineyards across Tasmania, ranging from the Pipers River and Tamar Valley regions in the north to the Coal River Valley in the south. Specially selected and crafted individual batches form the basis of this Rosé. All hand-picked, with gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine. To maximise blending options and complexity in the final wine, batches are kept separate during winemaking. Released with three months of bottle age. This is a vibrant sparkling Rosé showcasing the beguiling aromatics inherent to Tasmanian sparkling Pinot Noir. There are delicious, captivating aromas of strawberries and cream, rose petals, Turkish delight and fresh brioche. The palate is creamy, textured and rich while retaining an elegant vibrancy and freshness. A wine full of “joie de vivre” that brings the delights of summer into the glass at any time. Once released this wine is ready to enjoy. Nose - Fresh, Red Berry Fruits, Tea Rose Cherry Danish and strawberry house cake notes with leafy rose petal, ruby grapefruit. Palate - Elegant, Creamy, Crisp Pillowy mousse with creamy weight and a textural, tapers with chalky minerals. Finish - Mineral, Dry, Savoury and Refreshing Lingering red fruit richness with a refreshing bite.

Ayala Brut Majeur Rose Non-Vintage

Founded by Edmond De Ayala in 1860, the House Ayala possesses a remarkable history, rooted in the visionary spirit that resonates with its melodious name from distant lands. The name Ayala appears almost serendipitous, intricately tailored for the village of Aÿ, where the House has proudly stood since its inception. Edmond De Ayala, an inquisitive and bold personality, consistently pursued the path less travelled. Vibrant with the essence of excellence and a spirit of adventure, the House of Ayala continues to be inspired by the indomitable founder who paved its way. In contrast to the prevailing French tradition of dosage, which exceeded 150 g/L during that era, Edmond De Ayala took a bold and audacious move by unveiling "dry champagne" in 1865, with a mere 21 g/L dosage. As a true pioneer, he possessed a discerning vision to revolutionize the Champagne landscape by introducing a drier style, which has created a profound impact to the modern world. Through bespoke craftsmanship, House Ayala employs a tailored approach, working with a diverse selection of crus to achieve the utmost balance and skilfully express the exceptional terroir surrounding Chardonnay, the house's emblematic grape variety. Champagne Ayala relentlessly pursues the finest raw materials from the Champagne region and currently boasts a palette of 70 crus, with 50 of them dedicated to Chardonnay. These crus are sourced from the most esteemed terroirs of Champagne. This remarkable diversity, a distinctive feature of the house, contributes to the complexity and vibrant aromatic freshness found in their blends. The house maintains 20 hectares of their own vineyards, situated in esteemed locations such as the Montagne de Reims, encompassing Aÿ Grand Cru and Dizy, as well as the Côte des Blancs, including Chouilly and Oger, both classified as Grands Crus. Additionally, they have vineyards in Champvoisy and Passy-Grigny in the Vallée de la Marne. With an unwavering commitment to pure expression of the raw materials, Champagne Ayala is transitioning their vineyards to organic viticulture and has obtained HEV and VDC certifications. The House consistently fosters trusting relationships with winegrowers and supports them in their environmental endeavours. Rosé Majeur embodies the refinement of AYALA champagnes. Chardonnay, the emblematic grape variety of the House, for the most part, brings freshness and finesse to this blended rosé, composed of 24 exceptional crus. When it comes to blending and vinification, nothing is left to chance. The Pinots Noirs, originating from the best crus on the Montagne de Reims, are handled here with emphasis on fruit rather than structure. Rosé Majeur is primarily a sweet treat, with a subtle dosage. The delicate notes arise from the red wine, added to the blend in a small amount. This still wine is elaborated exclusively from the Pinot Noir of Aÿ, a Grand cru characterized by the legendary generosity of its fruit. The low dosage, a trademark of the House, here underlines the beautiful freshness and elegance of a great rosé blend. Comprised of 51% Chardonnay 39% Pinot Noir 10% Meunier. It gets Ayala's trademark low dosage (just 6g/L) underscoring the beautiful freshness and fruit definition of this rosé blend. It's pale, light yet expressive. Brilliant, due to the high proportion of chardonnay in the blend. The notes of red gooseberries and raspberries, finishes lengthy and voluptuous owed to the 3 years on lees. Nose - Charming, Small Red Fruits, Flint Ayala Brut Majeur Champagne flavours of strawberry and red cherry, with flint and background bready character. Palate - Voluptuous, Smooth, Fresh Buoyant and expressive, creamy mousse delivering beautiful freshness, notes of red currants and raspberries. Finish - Persistent, Crunchy Fruit, Minerals Persistent flavours in the finish. From crisp vine peach to crunchy red fruits, with a pleasing bitterness and phenolic chew.

G.H. Mumm Cordon Rouge Brut Non-Vintage Twin Flute

This champagne is a brightly sparkling, light golden yellow liquid with an abundance of fine and elegant bubbles. The nose reveals initial aromas of ripe fresh fruit (white and yellow peaches, apricots), tropical notes (lychee and pineapple). It then opens up with the fragrance of vanilla before developing notes of milky caramel, breadcrumbs and yeast, culminating in aromas of dried fruit and honey. Heidsieck & Co Monopole Gold Top Brut Champagne

Maison founded in 1785 : Heidsieck & Co Monopole is the 4th oldest champagne house. At the begining of the 20th century Heidsieck & Co. Monopole was one of the leading Champagne brands, a supplier by Royal Appointment of several European courts: King of Prussia and Emperor of Germany, the English Court, Swedish Court & the Court of Tsar Nicolas II. Heidsieck & Co produce Pinot Noir predominant Champagnes that please discerning consumers and lovers of great champagnes. In July 2010, bottles over 200 years old were discovered in a shipwreck in the Baltic Sea. Between 1825 and 1830, a cargo galley sank with more than 150 bottles of champagne from different brands on board, including Heidsieck & Co Monopole. In November 2010, oenologists who examined the cargo reported that the bottles included the oldest known vintages of the Heidsieck & Co Monopole brand. Heidsieck & Co Monopole Gold Top Brut Champagne 2012 vintage is light yellow in colour. The nose is smoky, leading to hints of roasted dry fruits and subtle hints of hazelnut. Similar to that of gingerbread and honey. A creamy and round palate with good length and fine acidity. This champagne is best paired with shellfish or fish in a butter or cream sauce.

Pommery Apanage Blanc de Blancs Non-Vintage

A meticulous and confidential selection of magnificent terroirs. A common denominator of these soils: Campanian chalk, declined according to different exposures and depths. The Chardonnays of Côte des Blancs provide the main support for this cuvée and ensure its great elegance. On this solid basis, the northern terroirs of the Montagne de Reims and the hills of Nogent l’Abbesse contribute liveliness, structure and complexity. It is the harmonious association of these great terroirs which allows this cuvée to express an astounding freshness and a maturity worthy of an Apanage. Reserve wines to accentuate the aromas. As throughout the Pommery range, the collection of Pommery reserve wines supports the assemblage in a good proportion and enhances the sensation of great maturity of this cuvée. A long ageing in our historical cellars: As every Apanage, a prolonged ageing in the cellars provides this cuvée with the elegance and complexity which characterize it. This is an indispensable stage and one has to be patient to have all the subtleties of this assemblage revealed. The aperitif will be a privileged moment to appreciate this wine but caviar or a carpaccio of scallops with green lemon will reveal other facets of this cuvee. Remarkable elegance, the first nose reveals a spring freshness. Subtle floral notes of jasmine and acacia are harmoniously paired with delicate grades of linden. After this first impression of an incredible freshness, a large complexity reveals itself during which notes of citrus fruits and a creamy impression of frangipane express themselves alternately. The attack is open, without detour, as a sign of a very great assemblage. The elegance and freshness revealed on the nose can be found on the palate. The heart of the tasting is of an exemplary righteousness. The aromas of citrus fruits and white fruits (fresh apple) take over. The balance of the final is perfectly revealing the subtle flavor of yellow grapefruit.

Pommery Cuvée Louise

Created in homage of Louise Pommery, daughter of Madame Pommery, Cuvée Louise is a wine of exceptional and absolute purity which expresses the quintessence of the knowhow of the Maison Pommery.Cuvée Louise finds its origin within three grands crus; Avize, Cramant and Aÿ - true gems of the Champagne region.The 2003 vintage represents a year of madness, an atypical year, but such an extraordinary year that we had to keep a real footprint of it in order to be able to recall the excesses of Mother Nature. Grapes had to withstand temperature variations of more than 50°C over a period of 4 months and at the same time rainfall was weak. The vines made maximum use of the natural reserves of the chalk and therefore show very pleasant mineral touches.Notes which are initially evocative of pastry and lukewarm brioche are followed by floral aromas of yellow flowers and stamens, which blend with superb notes of white mature fruit. This is a wine with genuine length and great harmony, in a universe of elegance and finesse.

Tempus Two Blanc de Blanc

A zesty and refreshing sparkiling wine with enticing fruit flavours of passionfruit and green apple which provide a fruit sweetness, that is well balance by a refreshing citrus finish. A soft fine bead of bubbles completes the wine. Lifted fruit salad, dominated by passionfruit and green apple on the nose.

Caledonia Australis Umbra Methode Ancestral

Caledonia Australis Umbra Methode Ancestral 2015 vintage is a gold in colour with light bubbles. The nose has aromas of pineapple, pepper, quince, and rockmelon. The palate has good acidity and zine with stone fruit, ripe lemon, and pineapple flavours with a crisp, bright finish. This chardonnay is produced from organic certified fruit using the methode ancestral style (petillant naturel), where the primary ferment continues its magic in bottle. An ancestral fizz comes from late ripening patch of the vineyard.
