Then we added some fizz and undertones of brioche via some bottle conditioning (fermentation in the bottle). And because we picked the fruit early to accentuate the freshness and vibrancy of its flavours, we finessed the edges with a dash of residual sugar to create that perfect harmony between sweetness and acidity.
