The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. The nose shows very ripe fruit, floral notes and hints of warm brioche. The palate is fine, elegant and rich with wonderful balance and length. Cuvee Nicolas-Francois Billecart 1959 won first place in the Champagne of the Millennium 1999, out of 150 of the finest 20th century champagnes.

This Peper-Heidsieck 2006 Vintage Brut is an elegantly charming wine. With aromas of dried fruits, hints of red and black fruits and warm spices, it is intense and enticing on the nose. A densely structured wine, it has generous fruits on the palate with a touch of smoked tea and toasted almonds leading towards a lengthy finish.

G.H.MUMM Millésimé 2006 is a luminous and bright golden yellow in colour with fine, lingering bubbles.The nose reveals a superbly complex wine: notes of apple and pear, with yellow fruit such as apricot and mirabelleplum. It then develops aromas of dried fruit and nuts with hints of pastry. After a strong attack, the wine developsgradually. It then reveals the increasingly perceptible presence of Pinot Noir, giving an unctuousness to the structure before unfolding into a long, precise finish.

Showing a pristine pale yellow colour with very light, abundant bubbles which rise uniformly to form a fine mousse. The evocative bouquet opens with notes of pears and fresh cute white flowers. Left in the glass for a time, the nose develops a richness and density of pure character. Once on the palate, Comtes is lively, direct and precise with flavours of candied lemon zest and fresh pineapple. The balance is something to behold. This Champagne's marriage of finesse and aromatic intensity is a promise of further potential, but already offers very pleasurable drinking.

Louis Roederer Cristal Champagne is the epitome of class and elegance from the house of Roederer. A super limited and hard to find top echelon Champagne, Cristal is a 55% Pinot Noir and 45% Chardonnay blend that was harvested in near perfect conditions.
