Chandon Blanc de Blanc Non-Vintage

Pale yellow in colour, with green edges, the wine has fine bubbles and persistent mousse. Fresh lime blossom, apple and fennel aromas abound with some hints of nut and toast in background. A bright palate includes primary fruit flavours of pears and Fuji apples, nectarine and ripe meyer lemons. Soft acidity, gentle creamy texture and a very long finish are features of this wine.

Pommery Pop Brut Non-Vintage (Eiffel Tower )

This bottle of Pommery Pop comes in a limited edition box Eiffel Tower gift box. In 1858, Madame Pommery took over as head of Pommery & Greno after the death of her husband. She based the expansion of her House on the creation of wines unlike any others, with one constant demand: quality pushed to the extreme. In matters of taste she was ahead of her time. It was she who created Pommery Nature in 1874, the first brut champagne to meet with commercial success, thereby breaking with the tradition of very sweet wine. A woman in a man’s world, she imprinted her personality on her champagnes. Champagne Pommery Pop brings together the three Champagne varietals - chardonnay, pinot meunier, and pinot noir. Chardonnay brings the pleasurable freshness. Pinot Noir is the dominate grape bringing the fullness and roundness in the mouth. Pinot Meunier backs up the Pinot Noir.

Chandon Blanc de Blanc

As a widely planted grape in Australia, Chardonnay, represents around a quarter of the total grape harvest. Because of this, there is a large variety of locations and each location providing different sets of flavours. The diversity of Chardonnay expression shown in Australia is a large benefit to Australian produced sparkling wines. This estate grown Blanc de Blancs comes from three amazing sparkling vineyard locations - Whitlands Plateau, Strathbogie Ranges and the Yarra Valley in Victoria. The complexity drawn from méthode traditionnelle is on show in this exclusive release. The Chandon Blanc de Blanc 2016 vintage has green edges and is pale yellow in colour. It has persistent mouse and fine bubbles. The nose has aromas of quince, lemon myrtle, green pear, and seaspray. The oak barrels provide a subtle cinnamon spice blend. Enjoy flavours of quince and citrus on the palate with wonderful acidity and tension, soft texture with very fine bubbles.

Cloudy Bay Pelorus Rose Non-Vintage

Pelorus Rosé is smooth and elegant, with a pale salmon hue and brambly aromas. The nose is laden with raspberries, cranberries and wild strawberries, while red florals, rosehip and marzipan hover at the fringe. Baked quince, cranberry and brioche meet citrus notes on the palate, while its fine structure persists all the way to a soft, dry finish.

Jansz Tasmania is a luxury sparkling wine house, solely devoted to the art of sparkling winemaking since 1986. Location is integral to growing outstanding fruit and only Tasmania can boast such idyllic conditions. Put simply, it is the perfect place to craft premium sparkling wines. By allowing nature to do the work, the wines are naturally expressive of Tasmania's pure, pristine environment. Jansz is lead by vigneron, Jennifer Doyle whose viticultural journey began 28 years ago in her home state of New South Wales. Whilst Jennifer’s career has seen her traversing cool climate regions of Orange, Pemberton and Margaret River, the last 12 years have found her firmly planted in the Jansz ‘Pontos Hills’ and ‘Woodside’ vineyards in southern Tasmania. Sustainability is important to Jennifer, in life and work. She began exploring alternative methods of managing pests and diseases early in her career, realising the multi-faceted value of protecting and enhancing biological diversity. Jennifer’s 2012 Dr Don Martin Sustainable Viticulture Fellowship study tour further inspired this pathway. In 2017, Jennifer was awarded ‘Viticulturist of the Year’ at the Australian Women in Wine Awards, for consistent performance, innovation and best practice methods to achieve results. The grapes are sourced from selected cool climate vineyards across Tasmania, ranging from the Pipers River and Tamar Valley regions in the north to the Coal River Valley in the south. Specially selected and crafted individual batches form the basis of this Rosé. All hand-picked, with gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine. To maximise blending options and complexity in the final wine, batches are kept separate during winemaking. Released with three months of bottle age. This is a vibrant sparkling Rosé showcasing the beguiling aromatics inherent to Tasmanian sparkling Pinot Noir. There are delicious, captivating aromas of strawberries and cream, rose petals, Turkish delight and fresh brioche. The palate is creamy, textured and rich while retaining an elegant vibrancy and freshness. A wine full of “joie de vivre” that brings the delights of summer into the glass at any time. Once released this wine is ready to enjoy. Nose - Fresh, Red Berry Fruits, Tea Rose Cherry Danish and strawberry house cake notes with leafy rose petal, ruby grapefruit. Palate - Elegant, Creamy, Crisp Pillowy mousse with creamy weight and a textural, tapers with chalky minerals. Finish - Mineral, Dry, Savoury and Refreshing Lingering red fruit richness with a refreshing bite.

Clover Hill Exceptionnelle MV

Clover Hill was founded in 1986, on the site of a former dairy farm in north-east Tasmania with the sole purpose of producing premium, world-renowned sparkling wines. The Clover Hill site was selected for it’s ancient volcanic soils and sheltered amphitheatre. These fertile, undulating hills are now lined with rows of Clover Hill’s Pinot vines. The 66-hectare property in Lebrina, Pipers River, overlooks Bass Straight and provides an optimal vineyard environment. A cool maritime climate, with mild autumn temperatures ranging between a high of 25 and a low of 10 degrees. This results in a long ripening season, allowing superior flavour development, low sugar levels and high natural acidity: the perfect combination for super premium wine in traditional sparkling varieties - Chardonnay, Pinot Noir and Pinot Meunier. The process of crafting elegant sparkling wines in the traditional, French manner, known as méthod traditionelle (traditional method), is a highly specialised field. This places Clover Hill in an elite group as one of the few sparkling houses in Australia to exclusively utilise this method. Under their multi-vintage philosophy, Clover Hill focus on managing a reserve wine program to consistently produce wines of elegance and excellence. This approach allows them to create a highly desirable Clover Hill house style. They use four reserve wines – on yeast lees in tank and bottle combined with reserves in oak – large format oak – Foudre and stainless steel. Holding the reserve on yeast lees enhances freshness and vibrancy with the benefit of reducing the use of preservatives. The oaked components enhance and contribute both viscosity and mouthfeel to the wines. This Multi Vintage Exceptionnelle exhibits a light straw/green hue in the glass, with a fine persistent mousse. On the nose it delivers vibrant citrus and stone fruits which are complemented by layers of creamy complexity. The palate offers a crisp acidity and a concentration of rich and balanced lemon curd and lime which draw the wine through to a delicious and extended finish.
