Fire Gully Reserve Cabernet Sauvignon
Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.
Geoff Merrill Parham Cabernet Sauvignon
Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.
Hay Shed Hill Block 2 Cabernet Sauvignon
The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste. The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. This wine was matured and aged for 17 months before bottling during the Winter of the following year.Ø TYPICAL ANALYSIS 13.6% AlcoholØ FOOD MATCHING Barbecued meats, steak, chocolate, Szechuan cooking and venison

Domaine Naturaliste Le Naturaliste Cabernet Franc
Subtle threads of violets, cherry blossom and fresh juniper berries serve as highlights to an ample tapestry of black plums, cacao nib and ironstone. Sheer textures of crushed granite and black cherry skin are laced with porcelain tannin and quenching natural acidity.
Juniper Estate Cornerstone Wilyabrup Cabernet
Juniper Estate’s Cornerstone Cabernet is a benchmark expression of Wilyabrup, crafted from vines planted on free-draining gravelly soils at the heart of Margaret River. The vineyard’s coastal influence brings cool nights and warm days, producing fruit with natural balance and structure. Each parcel is fermented separately before undergoing extended maceration to build depth and complexity. The wine then matures in French oak barriques, with a careful balance of new and seasoned barrels, allowing the character of the site to shine. Cornerstone Cabernet consistently offers aromas of blackcurrant, plum, and dried herbs, alongside subtle cedar and tobacco notes from its time in oak. The palate is defined by fine, persistent tannins and layers of dark fruit, supported by bright acidity. Built for cellaring, this is a wine that will develop gracefully, revealing greater nuance and harmony over the years while remaining true to its Margaret River origins.
