Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.

The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Subtle threads of violets, cherry blossom and fresh juniper berries serve as highlights to an ample tapestry of black plums, cacao nib and ironstone. Sheer textures of crushed granite and black cherry skin are laced with porcelain tannin and quenching natural acidity.

Frankland Estate Olmo's Reward, named after Dr Harold Olmo who first identified viticultural potenital of the isolated Frankland River region, is an elegant blend of Cabernet Franc and Merlot and small components of Malbec, Cabernet Sauvignon and Petit Verdot. The concentrated palate has fine grained tannins, dark chocolates and savoury earthy notes leading to a generous and long finish.

The 2021 vintage was marked by low yields, ensuring that the crop was harvested at optimal ripeness and in ideal condition. Although bird pressure was high and unpredictable rainfall during the growing season and throughout harvest presented challenges, the artisanal nature of our wines prevailed. Wines of excellent balance and fruit purity, a vintage similar to 2003 in style. Best varieties Cabernet Sauvignon, Malbec, Sauvignon Blanc and Semillon. A clean introduction of citrus blossom and white flowers wraps the palate, followed by vibrant notes of mandarins and pink grapefruits. The transitions to a textural mid-palate with flavors of pink lady apples and Bosc pear, culminating in a crisp finish marked by a clean minerality. The creamy nettle lingers, showcasing the wine's multilayered complexity and the balance of its phenolics.
