The Barriques were rotated 9 times per day and followed by a 10 day post-ferment maceration. The free run juice and pressings were barreled separately in new oak for 18 months. Only the finest Barriques were selectively blended.

Pale straw coloured in the glass, experience aromas of white peach and grapefruit along with a touch of smoke thanks to some French oak barrel fermentation. Enjoy generous stone fruit flavours on the palate accompanied by a soft, creamy tedture thanks to extended lees stirring.

Aged 15 months in oak, this wine displays green apple and hints of toasted oats on the nose, which comes through on the palate giving apple strudel flavours.

The 2011 Storm is produced using 98% Chardonnay and 2% Pinot Meunier grown on the slopes of Mt Canobolas at an altitude of 870m. Ageing for a minimum of 5 years on lees. A Haromy of Pineapple, Guava, fresh cut citrus and hints of green apple ending in complex toasty notes. Opulent on the palate and succulent, round at heart. In the glass: Pale lemon green. On the nose: Lime, green apple and jasmine.On the palate: Bone dry and extremely mouth-watering with layers of lime, green apple and jasmine and faint chalky notes on the finish.

The colour has a slight tinge of pink from the Pinot Noir portion of the blend. The palate is well structured and elegant, with crisp apple and citrus elements from the fresh acidity of the grapes. This freshness is complexed with the yeasty nuttiness that is derived from 24 months of aging on the yeast lees in the bottle. The dosage sweetness added on disgorging is minimal and balances the finish on the palate perfectly. Together these characteristics produce a wine of great complexity that fill the mouth over the length of the whole palate. The overall richness weight and structure of the wine will see it greatly improve with further careful cellaring over the next 10 years.
