The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. St Hugo Cabernet Shiraz displays a dark ruby red with purple hues. The bouquet of dark forest fruits such as plum, blueberry and cassis lead into a beautifully complex palate of blackcurrent, sweet plum and chalky tannins. There is a underlying savoury oak hint and a finish of lingering dark chocolate.

Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.
