In fact, we already began the process back in the vineyard by thinning 30% of the crop to enhance flavour intensity. "This has hallmark slickness and vitality in texture, with greasy apple, nashi pear and cashew savouriness, a lift of pleasing white vinegary tang and a dash of sweet, exotic spice. That's a good list of ingredients for gris, here done medium weight with good length in tow. While not overly complex, it delivers a sense of layers and interest to the wine.
