Perhaps it was no coincidence that they made the move at the same time as the Scotch industry was in the middle of a massive downturn, with many distilleries putting down minimal spirit or even worse getting mothballed. Regardless, the decision to move was a good one, allowing them to focus their energy on being closer to the source of the casks that make up around 90% of the Single Malt industry. And the oak that was selected for Glenfiddich was as close to the source as you could get. The Nikka Coffey Malt is the result of a unique distillation process in Coffey type column stills, which are normally used for grain whisky production.As such, this unique 100% Coffey malt is categorized as a grain whisky, and offers a surprisingly rich texture with deep oaky notes.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. One of the six classic malts of Scotland, this Whisky is best enjoyed neat or with a slight dash of water.

Released to commemorate the 200th anniversary of the founding of Lagavulin distillery by John Johnston in 1816, this eight-year-old is big and smoky, with sweet spice that becomes apparent with a drop of water. Inspired by the visit of Alfred Barnard to the distillery in the 1880's when he tried an 'exceptionally fine' eight-year-old from the distillery, this is a fitting tribute for the milestone.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

NOSE: Spiced oak, warming vanilla and freshly shelled nuts. PALATE: Summer berries and cream. A splash of water brings out warm biscuits, oak spice and candied orange. FINISH: Rich spiciness, sultanas, citrus zest and brown sugar.

Dewars 18 Year Old Scotch Whisky is carefully prepared by putting the whisky back into the cask to mature a second time after blending (double-aging). This method allows all of the older and characterful whiskies to mingle before bottling with resulting flavours of nut and marzipan, to name a few.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice.
