Regardless, the decision to move was a good one, allowing them to focus their energy on being closer to the source of the casks that make up around 90% of the Single Malt industry. And the oak that was selected for Glenfiddich was as close to the source as you could get. The Macallan 12 Year Old Double Cask is the perfect balance of 100% sherry seasoned American and European oak, a marriage of 2 wood types. Smooth, sweet and balanced. The defining style is American oak - citrus and light oak balanced by the expected Macallan character of rich fruit and wood spice.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Shinobu Whisky is hand crafted by the creative distiller, Mr. Usami, by carefully selecting whisky from around the world which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak in Japan. The anticipated second release of Bruichladdich Port Charlotte 10 year old. The smouldering heat of peat and dark fruit is finessed by floral top notes, a twist of citrus and mellow oak. Full term in first-fill bourbon, sherry, tempranillo and French wine casks for a decade or more. Bottled at 50% alc. vol. using Islay Spring water. Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.
