Made from the blending of malts from the two distilleries of Yoichi and Miyagikyo, this whisky was the pride and joy of its creator Masataka Taketsuru, founder of Nikka and the father of Japanese Whisky. Light golden honey in colour with candied nuts, walnuts and hazelnuts on the nose as well as delicate and gentle smoke coming through with hay. Forward and straight pallet with juicy mouth feel, yet retaining a very gentle and sophisticated heat. Sweet apricots and peach dominate at first, leading to vanilla and subtle hints of ripe grape. Complex and long on the finish with lingering taste of dry herbs, leather and sweet pastry.

Fresh wood barrel dominates the spirit with a touch of vanilla and flowers that bring to breath of nectar, maltose, tones of fruits citrus, Mizunara oak & coffee beans; medium wood intergration, then finish with a sweet aftertaste of maltose. Very smooth, rounded full pallet and easy to drink.

Firm, powerful. A well-balanced attack gives equal footing to aromas of peat, smoke, spices, fresh fruit (melon, kiwi) and nuts (almond, walnut), which it delivers in spades. The mid-palate starts off with chocolate notes, but the peat soon takes the lead once again.The finish is long, silky. Extremely mature, it overflows with ripe fruit (pear, Mirabelle plum, apple). The peat starts taking on an herbaceous and malty character, while the salty flavours gives the finish plenty of depth and coastal freshness. The final nose offers menthol, spicy (coriander, dill) and earthy (leather, chestnuts) notes.

NOSE: Deep vibrant vanilla notes with hints of citrus, caramalised brown sugar and cinnamon. Baked apple and ripe summer fruits and balanced with the rich oaky aromas. TASTE: Beautifully rich and sweet with layers of creamy toffee, woody spices, candied orange peel and fresh toasted oak. FINISH: Long lasting with lingering sweetness.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. A gentler, more feminine and food friendly expression that Islay lovers should get to know. Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. The distillery's gently fruity-smoky style sets it apart and comes down to the production process: "...although it receives the same spec of malt as sister distillery Lagavulin, Caol Ila’s distillation regime – longer fermentation, higher cut point, taller stills, helps to reduce the heavy phenols."
