Intense, textured and showing pure fruit flavours, Jester Shiraz is considered Mitolo's baby G.A.M Shiraz using the same barrels in which the G.A.M was previously aged in. The G.A.M. is deep purple, the nose is an intense combination of smoked herbs, liquorice and blackcurrants leading to a full bodied palate with notes of cassis and cracked pepper. This wine presents a deep garnet hue. Fragrances of cranberry, red currant, cassis and herbs leap out of the wine glass. The palate shows classic Cabernet elements. Ripe flavours of cherry, cranberry and cassis integrate with vanilla oak and cedar. Balanced by firm tannins, the wine leads to a persistent and mouth filling finale. This wine can be cellared for a period of 6 to 8 years.

A layered and floral nose of fresh lavender, flowering thyme and sage, along with bright red berry and dark cherry fruits. The palate is layered and complex whilst maintaining elegance. It has a mineral rich, structural palate with characters of wet slate, savoury cherry fruit, hints of warm spice and bright pomegranate like acidity. It is layered and has a fine and lingering finish.
