Giant Steps Wombat Creek Vineyard Pinot Noir

The 16ha Wombat Creek Vineyard at Gladysdale is the highest in the Yarra Valley, at 420m. Planted in 1988 on north-east facing slopes, it was originally intended for sparkling wines, but has been transitioned to Pinot Noir (and Chardonnay) for table wine. The underlying iron-based red volcanic soil and rock contribute to wines with a distinctive soft yet long and firm palate. MV6 clone Pinot Noir grapes are hand-picked with 20% destemmed to the base of the vat for a pied de cuve ferment. The vats were then filled with whole bunches and closed to allow a semi-carbonic maceration to occur. Some foot-stomping takes place to release more juice and extend skin-contact time. After two weeks the wine is pressed to tight-grained, 228 litre, French barriques (about 18% new) for 10 months before blending and bottling without fining or filtration. The wine is noted for its soft texture and long, well-structured palate

Yarra Yering Underhill Shiraz

Yarra Yering is not only a Victorian icon, but a true Australian wine treasure. The Underhill Shiraz is sourced exclusively from the 1974 planted block of Shiraz at the western-most extremity of the vineyard. Drawn from soils with a higher clay base which has resulted in a wine of a more masculine bent offering darker fruits and spice with chewier tannins and a savoury undertone.

Yering Station Reserve Shiraz Viognier

Yering Station Reserve wines are produced only in years of outstanding quality. The Shiraz Viognier is co fermented, made up of 95% Shiraz and 5% Viognier. A wonderful vintage in 2012 where fruit was able to ripen to maturity in cool conditions

Giant Steps Sexton Vineyard Pinot Noir

Giant Steps is a complex Pinot Noir with terrific varietal character. The nose shows rose petal, dark cherry and tomato leaf aromas and the palate is fleshy but tight, with savoury, dusty notes and silky tannins.

Handpicked Wines Wombat Creek Yarra Valley Pinot Noir

Tasting Notes Planted on steep slopes at higher elevation than any other vineyard in the Yarra Valley, Wombat Creek Vineyard boasts a long, cool growing season that is perfect for Pinot Noir wines with a beguiling mix of power and purity. This wine has excellent palate weight, layers of red fruits and velvety tannin unfolding over a long finish. Season There were no big heat spikes in the 2018 season, but it was a warm season overall and the harvest was a little early. Cool weather and regular rain up until Christmas made a slow start to the season, setting up good ground moisture and vine health coming into summer. Extended dry, mild weather over January and February was excellent for ripening Pinot Noir fruit. Bunch weights were high, leading to good yields. Winemaking The fruit was handpicked in mid-March in cool, dry weather then chilled before destemming and vinification in open fermenters with wild yeasts and hand plunging. The wine was matured for 11 months in French oak barriques and puncheons. We chose a mix of used and new barrels from a selection of Burgundian coopers.

Yarra Yering Pinot Noir

The Yarra Yering Pinot Noir is produced from what are amongst the oldest Pinot Noir vines in the Yarra Valley. Always aristocratic, fragrant with intense aromas of sweet strawberry and ripe plums, the Yarra Yering Pinot rounds out with mouthfilling notes of the same with a length hard to ignore.

The emphasis in all of the vineyards has always been upon innovation, with De Bortoli credited with the creation of Australia's most famous dessert wine, the Noble One. The De Bortoli winemaking philosophy is that great wine begins in the vineyard. Their belief is that sustainable vineyard practices will deliver exceptional fruit quality to the winery as well as real environmental benefits. With a focus on careful site selection, vine maturity, high input viticulture and a move towards biological farming principles, De Bortoli Wines are also focusing more and more on single vineyard wines and the expression of specific terroir through their wine.
