A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

Vat 47 from the Hunter Valley has a silky bouquet of melon stone fruit and creamy oak that is followed by a palate of extraordinary balance and length. An absolute classic and will only get better with some medium term ageing.

Estate dry-grown vines, planted '69. Hand-picked, whole-bunch pressed, wild-fermented in French oak (30% new), matured for 10 months. Bright & complex nose of blossom, stonefruit, candied figs & lemongrass with subtle background oak. Generosity of stonefruits flavours give fruit volume & weight to the palate. A ginger cream spice & texture lending weight with gentle vanillin oak & a fine tannin framework.

The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Chardonnay coming from the Bizot Vineyard in the Piccadilly Valley (Adelaide Hills), planted in 1996 at 500M altitude. Hand harvested (clones 76 and 95) on 1 March 2016 and whole bunch pressed (low yields of just 487.5L per tonne). Method Classic - first fermentation and ageing on full lees in old oak for 10 months, second fermentation and ageing in bottle on lees for 42 months. Disgorged September 2020.
