Freyas Once & Well wines are grown in ancient granite-based soils. They are wines of place, expressing the essence of Margaret River, with fruit sourced from a few different sites.

Once & Wells Chardonnay comes from grapes grown in both the warmer and cooler areas of the Margaret River region, mixing tropical and citrus characteristics to produce a distinctive and well-balanced wine. The Chardonnays nose is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, citrus, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. A touch of vanilla and spicy oak gives this Chardonnay a refined note.

This Madfish Sauvignon Blanc Semillon has alluring aromas of guava, nashi pear, citrus zest with a hint of white floral on the nose. The green apple and passionfruit notes shine through beautifully the lime citrus backdrop on the palate. A delightful and refreshing wine that could easily be paired with seafood or summery dishes

Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. The wines are made by the dedicated team led by chief winemaker Janice McDonald. The chardonnay displays bright notes of citrus blossom, peach fuzz and melon that merge beautifully with rich nuances of crème caramel, lemon curd and vanilla pod. A scattering of nutmeg and preserved pear furthers the texture and flavour on the palate.

Allan Scott consistently produces amongst the best Sauvignon Blanc from Marlborough. Mature vines and meticulous viticulture always provides quality such as this fine example.

We bought our bottle for just under $13 during a recent visit to Wollongong and came back for seconds. What a delight it is - crisp, fresh, smoothly textured and packed with juicy, nectarine-like varietal flavour.
