Monte dei Cocci Fiano Minutolo is the result of traditional winemaking with a modern approach. The fruit is from the heart of Itria Valley in Puglia, grown at 450 metres. The Fiano Minutolo grape is highly aromatic and the wine produced displays flavours and aromas of flowers and sweet herbs with fresh yellow fruit. Highly enjoyable as an aperitive, and perfect with light dishes.

The Fiano comes from two vineyards in McLaren Vale grown by Ben Lacey. One in the Tatachilla sub region of southern McLaren Vale. Only a few kilometres from the sea and almost at sea level, it is a cool maritime influenced area of the Vale. Sandy loam over a shattered limestone base, scattered with ironstone fragments. This parcel was fermented in stainless steel, using a combination of natural and mixed culture yeasts. The second vineyard is in the Northern and high-altitude region of Seaview in McLaren Vale, with thin red loam over a solid limestone geology. The grapes were harvested with a selective harvester and tipped straight into an open fermenters as whole berries. Fermentation was allowed to occur naturally and then later over seeded with aromatic yeast. The ferment was allowed to tick away slowly for approx. 3 weeks. The final blend was 60% cold tank ferment, 40% full skin contact for three weeks.

Tasting Notes The Chardonnay is sourced from our western facing block. The yields are a little lower from this block which gives added intensity. The Chardonnay shows some lemon and nutmeg on the nose while it has a fresh citrus flavoured palate with a tight finish. The potential to cellar for the next 3 -5 years. WINEMAKERS NOTES Colour: Good youthful colour, with yellow green tints dominating Nose: Intense tropical and grapefruit nose with vanilla oak Palate: Rich full palate showing fresh acidity well balanced by creamy lees contact characters VITICULTURE & PRODUCTION Varietal Composition – 100% estate grown Chardonnay from Borambola NSW, planted in 1995. Aromas of light white stone fruit and white flowers, citrus, beeswax, toasted muesli and nuts, with background exotic spices.The palate is textural and full flavoured with restrained yet complexing oak use. The wine is balanced and has a fine acidity that is balanced and gives a focused line to the palate.

Tempranillo and Graciano grown on the red soils of the Hilltops region near Young, NSW; were vinified seperately before blending and matuaration. The savoury and smooth Tempranillo is complimented by the spicey fruit and structure of Graciano, the resultant wine has greater intensity, depth and length.

The Viognier was hand harvested from our vineyard out near Wombat.The wine has zesty fresh characteristics with a palate situated somewhere between that of a Chardonnay and a Semillon.
