Domaine Dujac has always held a dear spot in Australian hearts. Its forward-thinking, international air-a rarity in what can be a sternly parochial region-is manifest in the Domaine’s full embrace of organic viticulture. Like DRC, Dujac is a strong advocate of the inclusion of whole-bunches in the fermentations, although the approach is more flexible than in the past depending on the degree of lignification. Among Burgundy’s upper tier, the Morey Saint Denis is benchmark: plump, succulent and more Chambolle red fruited than Gevrey-meaty.
