Domaine Vaiveley, Clos de Vougeot This exceptional Grand Cru wine comes off a 1.287 ha parcel of the famous 50.12 ha walled “Clos de Vougeot” vineyard in the commune of Vougeot. This vineyard dates back to 1336 when the Monks of Cîteaux created the Clos. The vineyard has an east to south-easterly aspect with shallow soils. Grapes are hand harvested and undergo a short pre-fermentation maceration before being fermented in large wooden vats. After three week fermentation, the wine is gently pressed using a vertical press before being matured in up to 70% fine-grained new French oak barrels for 16-18 months. They began selling all of their fruit to Henri Boillot while Yvon's son Thibaud continued to study and learn more about vineyard management and winemaking while working with Henri Boillot and Hudelot Noellat. Pretty good places to learn! In 2015, the Clergets stopped selling their fruit and Thibaud produced and bottled his first wines under the Domaine Yvon Clerget label. Thibaud Clerget is the winemaker, in his 30s by the way, and oversees top premier cru vineyard holdings in Volnay and Pommard to go along with a tiny parcel of Clos Vougeot from Grand Maupertui in the upper section of the Clos next to Anne Gros and Meo Camuzet!

Brothers David and Nicolas Rossignol run this 100% Organic and Biodynamically farmed Domaine located in the very heart of Gevrey Chambertin. Very early to the Sustainable farming movement, all the family's vineyards, located in some of the most impressive vineyards in Burgundy, were converted to Certified Organic in 2004.

The Cuvée Classique is drawn predominantly from the Domaine's vines on the mid-slope of the Clos but also plots on the lower and upper parts of the vineyard. While there's certainly more depth and fruit intensity here, there's also more detail and clarity and exceptionally fine, powdery tannins that coat the tongue and drive the very long finish.

The Vieilles Vignes comes from a selection of the oldest vines in the Clos, mostly planted in 1910 and situated mid-slope, right in the heart of the vineyard. These ancient vines yield only two to three tiny bunches of grapes per vine in a good year. The net result is a Clos de Vougeot of unique intensity, breadth of flavour, complexity and structural power. Interestingly, there are a number of Pinot Beurot (Gris) vines inter-planted in these parcels which are harvested and vinified with the Pinot Noir.
