Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Aqua Vitae: Raspberry Gin is our latest gin; a sweet yet refreshing mixture created with Tasmanian-grown raspberries. These ingredients combine to create a harmonious taste that is rich on the palate, bringing a sweet and sensuous experience with each sip. With its rich red colour, and sweet raspberry finish, this gin can be enjoyed by itself on ice, or with a splash of sparkling water.

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. Jungle Gin's bright aromatics work wonderfully with a dry tonic garnished with a lime leaf, yet equally well in any citrus forward cocktail.

To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. Boatrocker Raspberry Gin provides a modern twist to a classic G&T (feel free to garnish with fresh or freeze dried raspberries), alternatively, make a 'Pinky' Tom Collins by using Boatrocker Miss Pinky Raspberry Berliner Weisse instead of Soda water!

The bouquet is layered with abundant aroma's of plum pudding, cigar box, blackberries & chocolate. It has an excellent length of flavour, velvety tannins and hints of smoky oak. 71% Shiraz and 29% Cabernet Sauvignon are separately fermented & matured in a combination of new French & American oak before final blending.

Each 500ml spirit lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. As each Gift Box is manually waxed, no two boxes are the same, some minor organic imperfections may be visible.Whisky:Distilleries began producing whisky in the late 18th century. The spelling of the term Whisky alters by country, Scottish, English, Welsh, and Canadian whiskies use Whisky, while the Irish use Whiskey. Scottish Whisky must be aged in oak barrels for a minimum of three years, where it is known as the spirit of the Gods. This might explain the Angels Tax, used to describe the amount of whisky lost each year to evaporation during the ageing process. They must be happy little Angels over Scotland.
