Pale yellow youthful green tinges, which I equate with quality young chardonnay. Aromatics are instantly very serious. Intense fruit nectarines and white peaches melding with lemon citrus beautiful French oak hovering just above the wine at the moment intense more than a cursory nod to Burgundy. The tiniest whiff of sulphides perfect for a wine of this age. When sipped, the wine shows its incredible intensity, no doubt derived from the very low yield.

Mon Tout Heydays Chardonnay
‘Mon Tout’ - in French, means ‘my everything’. It's an ode to the great loves in our lives. And that's what Mon Tout is for the winery. They've always loved the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming - which they believe is the future for wine. Mon Tout Heydays Chardonnay 2022 vintage comes with another change up this year with Mount Barker dictating even more of the style than the 2020 release, yet Heydays is still overtly, beautifully and enticingly Chardonnay. Delicate floral aromas of honeysuckle, apricot, and lemon zest. Flavours of stone fruit, lychee and pear combine in a silky and seamless manner. The fine, mineral acidity and oak tension adds restraint, texture and length.
Pierro LTC Sauvignon Blanc Semillon
Located in the heart of Western Australia’s renowned Margaret River wine region, the Pierro locality, owned and managed by Dr Mike Peterkin, has a viticultural pedigree second to none. Besides making award-winning Chardonnay of distinctive character, Mike also produced the first Semillon Sauvignon Blanc blend in Australia. The Pierro reds are now among the very best in the region. Each parcel is hand-picked, chilled, hand-sorted and whole bunch pressed. There are multiple picks for this wine. With the first batches being picked for aromatic complexity and acidity, and the latter being picked for flavour and texture. Each batch is kept separate and inoculated with different yeasts depending on the variety and date picked. During this time a quarter of the wine is fermented in French oak barriques for 2-3 months for mouthfeel and texture. These different elements combine as a whole to provide an incredible amount of complexity to the final wine. The separate batches are then combined and left on fermentation lees for 3-4 months prior to bottling. A light dry wine, delicious when young but has the capacity and backbone to mature and develop in the bottle. Flavours of citrus, pear, green apple, melon and tropical fruit. Fresh, crisp and dry with both complexity and elegance. An ideal accompaniment to seafood and white meat dishes.
Mon Tout Long Play

Mon Tout look at the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming. Pinot Gris & Gewürztraminer - picked and pressed together to stainless steel where the juice was given extended contact with solids for 10 days prior to ferment, with a portion going to ceramic eggs to undergo cool and slow ferment in contact with skins for 2 weeks. Riesling - natural ferment in tank with low juice solids at a cool cellar temperature. Subtle and fresh, yet layered, this vibrant summertime white melds an array of riotous fruit with mouth-watering acidity and silky texture. It is a sensory journey on which one is carried from Pinot Gris’ classic pear, apple, and exotic sweet spice aromas to Gewürztraminer’s rose petal and white pepper tones. The palate is tightened by Riesling’s bright acidity and zesty flavours. Guided by a fine acid line, the midpalate unveils an almost oily texture and supple fruit weight, striking the perfect balance between bright and rich. An abundance of orchard fruit collides with tropical fruit punch and refreshing minerality to create an eminently appealing wine with a citrus-filled finish.
Reserve Chardonnay
Winemaker notes Colour: Pale Gold Bouquet: Our Reserve Chardonnay has a bright and lifted nose of sweet pastry, lemon curd and fleshy white stonefruit. Palate: The palate displays a rich and layered mix of fresh stonefruit, citrus and intense vanilla bean flavours. A fine mineral thread ensures a wine of length and persistence. Viticulture The vineyard is planted on Karri loam gravel soils with underlying laterite. Vine rows run north south down a moderate north facing slope and are clone Gin-Gin with trellis structured to vertical shoot positioning. The vineyard is subject to the cool Southern Ocean breezes and ripens slowly, evenly and with naturally high acidity. Winemaking The fruit is handpicked then cooled before whole bunch pressing. New and seasoned barrels are filled directly from the press to enhance complexity. Only the free run fraction is reserved with harder pressings separated to ensure a delicate and fine expression of the fruit in this wine. The juice is left to ferment spontaneously and can take up to three weeks to ferment with some cooling at the height of ferment. After ferment the barrels are topped and gently stirred with inert gas protection monthly. A small number of barrels were encouraged to finish malolactic fermentation to ameliorate the natural acidity. After nine months in barrel the wine is assembled in tank and aged on lees to further encourage complexity.

Attention to detail is paramount in the winery where careful site, clonal and oak selections are made to produce exceptional Chardonnay's like this one. Characters of dried pears, grapefruit, melon and fig are balanced with searing acidity and a length of flavour that speaks to its promising future.
Howard Park Chardonnay
Barrel fermentation and maturation in French oak barriques with partial malolactic has imparted texture and complexity to the minerally grapefruit flavours of this Chardonnay from WA's south-west corner.
