Aaron Mercer's new self-named venture is going from strength to strength, and is delivering some exceptional wines from across NSW.Pale lemon. Citrus, stonefruit and hints of almond bread. Restrained and light-bodied with a fresh mix of peach, pear and lime zest, refreshing acidity, zippy mouthfeel and hints of glazed ginger on the dry finish. An uncomplicated early-drinker.

The grapesfor this wine were picked from our 40 year old vines grown in the volcanic soilof the ancient Fordwich Sill. These low yielding mature vines produce ripe, concentrated fruitwhich results in a wine with excellent regional and varietal characters.

The Cabernet Sauvignon and Merlot for this wine is sourced from the Cookoothama Vineyard on the banks of the Murrumbidgee River at Darlington Point in the Riverina. Deep red in appearance with a youthful purple hue. Aromas of plum and blackberry, infused with hints of spice, herbs and dark chocolate. Concentrated flavours of red berry fruits, mocha and spice with ripe silky tannin and well integrated oak.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. The classic and seamless blend has profusion of flavour and a refreshing crisp finish. Fish Cage wines are vibrant, fun and and easy escape. We are often asked, "Why is there a fish in the cage?" Produced from old low yielding Hunter Valley vines this Verdelho has lifted lychee lime and tropical fruit aromas and ripe spicy flavours with zippy acidity.

Tulloch Verdelho is an exciting aromatic white that was harvested at night to retain the fresh natural acidity found in the quality fruit. The wine itself has honeydew melon notes with a real citrus blossom lift. The long, engaging palate has a real zest to it with a fine acid backbone treating the drinker with a long, crisp finish.

An early ripening grape perfectly suited to the warm climate of the lower Hunter Valley. The small berries retain their acidity and produce fragrant white wines with intense flavour. the cool 2022 vintage has produced a beautifully aromatic wine with tropical fruit and refreshing natural acidity.
