Our Master Distiller, Robert Fleming has carefully selected the very best casks of Tomintoul to create this beautifully balanced and complex single malt. Tomintoul 25 Years Old has been matured in the finest bourbon barrels, the end result is a bold, rich and fruity whisky with a long finish. An exceptional single malt, which was awarded Best Scotch Whisky at The Global Spirits Masters 2020. Nose: Bold and rich with aromas of treacle toffees, oat biscuits and sultana highlighted with hints of muscovado sugar and toasted oak. Palate: Sweet and complex with layers of salted caramel, rolling tobacco, caramelised nuts and maple syrup bound with oaky spices and stone fruit highlights. Finish: Warming and long with notes of coffee cake, crème caramel and burnt sugar.

The Macallan Edition No. 3 Single Malt Scotch Whisky

The third release in Macallan's annual wood-focused series called on the talents of Master Perfumer, Roja Dove to provide his remarkable sensory knowledge in describing the distinctive aromas peculiar to oak casks. Whisky maker, Bob Dalgarno subsequently used Roja's articulation of aromas to help shape the final character of Edition No.3. In short, the approach they took was the same as creating a great perfume. The final result is a combination of six American and European oak casks (first-fill Hudosa butts, American oak; European and American oak refill butts; first-fill Tevasa butts and puncheons made from European oak; first-fill bourbon hogsheads; first-fill Tevesa hogsheads; and first-fill bourbon barrels.) By all reports, this is another excellent addition that promises lifted floral notes and a deliciously, sweet, fruity flavour profile. Bottled at 48.3% Alc./Vol.

As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel. Aged for 10 years, 5 months, in a 300 litre, French oak ex-Tawny cask, TD0409 is a classic example of the Sullivans Cove French Oak ex-Tawny style. Bottled unflocked and unfiltered at 47.1% abv this cask produced a mere 359 bottles. An array of rich fruit and flavour, heightened by sea spray characters that come so effortless to Sullivans Cove. TD0409 masterfully blends savoury undertones and firm oak structure. From the musky and forest floor notes to the juicy fruit-laden palate and lingering finish of mandarin and Madeira, TD0409 is tremendous. Philosophy: Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good water and good grain is the foundation of all high-end whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Dates, Cacao Nibs, Orange Peel Vibrant and with aromatic oak presenting as antique furniture, incense, and Autumn leaves. As it opens in the glass, the spirit and ex-Tawny pre-fill come forward through the oak with a beautifully integrated array of fruity and briny notes: bonito flakes, blackberry syrup, orange pulp and more berries. Dates, cacao nibs, candied orange peel and fresh orange provide depth and carry a smooth transition to the palate. Palate - Peaches in Syrup, Vanilla, Bran Cereal Palate Very quickly characterised by a wave of tight tannin; Tawny and oak-forward for just a moment, and then an explosive, bright and juicy fruit profile presents peaches in syrup, orange cordial and raspberry jam. A divine vanilla syrup note mingles with a savoury base element (bran cereal, and bonito flakes again), as clove and aniseed point back to the spirit character. Rose, sticky date pudding and fruit mince pies linger on the back palate. Finish - Mandarin, Musk, Nutmeg A beautifully long and layered finish presents mandarin, musk and nutmeg. Red dates and Madeira come next - incredibly rich and earthy, classic Tawny influence - and lots of liquorice mingles with notes of raisins and orange cake. Vanilla musk echoes throughout. Mortlach 21 Year Old Single Malt Scotch Whisky Non-Vintage
Built on the site of an older illicit distillery Mortlach was the first legal distillery in Dufftown which is the epicentre on Speyside. Mortlach is again making its mark as a single malt with last years Diageo Special Release bottling selling out in record time. Distilled in 1999 and matured in ex Pedro Ximenez Sherry & Oloroso Sherry seasoned casks for no less than 21 years. Bottled at 56.9% abv and non-chill filtered. NOSE Rounded with dried dark fruits and rich sherry like notes, citrus peels, pancakes and salted butter, meaty with light savoury notes. PALATE Smooth and silky texture, dried fruits, savoury with chilli spice and dark fruits. FINISH Fruity and savoury notes, drying and rich.
Cognac Frapin Extra Grande Champagne Non-Vintage
The Extra is a blend of the Frapin family reserves, with an average barrel age of 40-50 years. Frapin sources its fruit for this fine Cognac from their family vineyards in the heart of Grande Champagne, the finest terroir in Cognac. Frapin utilizes dry-cellar aging for the Extra, allowing a higher percentage of water evaporation percentage relative to alcohol, leading to a more refined, elegant Cognac. The Extra shows complex cigar box characters, showing a sweet and complex velvety texture with layers of spice, roasted nuts and dried figs.
The Dalmore 21 Year Old Single Malt Scotch Whisky
For over 150 years, the Dalmore has set the standard in multi cask maturation. Hand selected casks, from the world's finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse. The 2023 release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts. The casks used to finish this exceptional dram were specially selected by Dalmore’s Richard Paterson. They rested for decades at González Byass in Jerez, where they were used to mature 30-year-old Matusalem Olorosso Sherry, before making the long journey to the Scottish Highlands. This is not the easiest way to source a whisky cask, but the extra effort makes perfect sense when the Dalmore 21 Year Old hits your glass. Seville oranges, bitter chocolate and Colombian coffee tantalise on the nose, while sweet liquorice, black forest fruits and roasted walnuts delight the palate, finishing with notes of peaches, ginseng and pear tarte tatin.

This 30 year old Glenfarclas Single Malt has been matured in some the best oak casks available to Glenfarclas. Produced in the heart of Speyside, Whiskies from this area are generally known for their elegance and complexity. Dark amber-gold colour leads to the rich, intense combination of sherried fruit, Christmas spices, peat smoke and dark chocolate. The warm and rich flavours gradually melt into a lingering fruit and nut chocolate feel on the palate. The finish is long lasting and velvety smooth.
St Agnes XO Grand Reserve 40 Year Old
Dark dense amber. The nose is of dried figs, hazelnut, orange candy and prunes. The aromatics continue with cocoa, vanilla cream and smokey oak from over four decades in small oak. The palate is endlessly complex. Chocolate truffles, hazelnut, prune, almond and cigarbox tobacco. The 40 Year Old Grand Reserve continues to linger long after first sipped.
