Aromas and flavours evoke malt milkshake and crème brûlée, adding a creamy depth balanced with lime sorbet freshness. Matured for 17 years in a single 200L American oak second-fill cask, this bottling yielded just 192 bottles at 47.6% ABV. Sullivans Cove Second-Fill casks are a truly special part of the distillery. Selected American Oak and French Oak barrels are refilled, which imparts a gentler oak profile, allowing the whisky’s spirit to shine. The range includes Old & Rare refill casks and features a more restrained, delicate style that has become a favourite among staff and fans alike. Hakushu 18 Year Old Single Malt Japanese Whisky

The Hakushu 18 Year Old is a complex, amazingly well-defined single malt blended with the pure waters of the Southern Japanese Alps. The nose opens with orange, ripe pear and dried mint aromas which merge with notes of oregano, almond, backed by dry smokiness. The palate is soft and delicate with complex notes of jasmine, mango, quince and menthol accented by a sweet hint of manuka honey and baking spice. Notes of citrus, honey and subtle smoke emerge on the lingering finish. Limited Stock

Hibiki 21 Year Old Blended Japanese Whisky

Apart from Single Malts, Suntory also produces a premium series of blended whiskies under the label 'Hibiki' (meaning 'harmony'), usually containing a high proportion of Single Malt (upwards of 50% according to one of the company's blenders). Thirty different malts are employed from Suntory's three distilleries, most with an age well above 21 years. Hibiki 21 Year Old was, yet again, selected as the best-blended whisky in the world at the World Whisky Awards 2017. Hibiki has been awarded every year at the WWA since 2009. The judges described it as being Elegant, sweet and complex. This whisky is full of dried fruit, orange peel, strawberry jam, and baked apple from start to finish. Smooth, subtle and fairly short. Obvious collector appeal here, but we'd like to imagine this one being appreciated for what's inside the bottle. 43% Alc./Vol.

Yamazaki 18 Year Old Single Malt Japanese Whisky

Yamazaki is Suntory's flagship single malt, multi-layered with fruit and Mizunara aromas. Yamazaki 18-Year-Old is rich with mature autumn fruit resulting in a blackberry, strawberry and dark chocolate palate and long, spicy, smooth finish. It is not lacking in any flavour or aroma. Jura Vintage Single Malt Whisky

Shining a light on the distillery’s exceptional spirit from a bygone era, Jura Rare Vintage 1990 is a rich and lively single malt, reflective of the character now synonymous with our island and its tiny island community. Distilled on 5th December 1990 as cool winter temperatures prevailed, the Jura grassy new make spirit was filled into American White Oak ex bourbon barrels to slowly mature for 26 years, before being finished for a further three years in an Amoroso Oloroso Sherry butt. Crafted from non-peated barley and bottled at 46.5%, this incredible whisky is non-chill-filtered and natural in colour.

Nikka Single Malt Miyagikyo Sherry Japanese Whisky

Nikka's Miyagikyo Distillery is known for producing delicious, sweet whisky with strong but fruity aromas. This limited edition Single Malt Sherry cask was released in 2015 and one of only 3,000 bottles produced. The purple label is a tribute to the whisky which was aged in Spanish sherry casks. This time the whisky employs a marketing concept that's currently in vogue: The "collaborative effort" (think Glenfiddich's Project XX). Master blender Bob Dalgarno has teamed up with Spanish chefs Joan, Josep and Jordi Roca and each contributor has handpicked a cask: Joan Roca, head chef, picked 1st and 2nd fill Diego Martin casks for its rich green wood and toffee flavours. Jordi Roca, pastry chef went with 1st and 2nd fill Vasyma American Oak casks to include light vanilla and citrus notes. Joseph Roca, the sommelier, selected 1st fill Jose Miguel Martin casks with spicy ginger notes. Bob Dalgarno picked 1st fill Tevasa cask, which conveys dried fruit and sherry notes. This combination of sherry puncheons, butts and refill hogsheads has resulted in a "deliciously floral and fruity whisky with notes of tropical fruit, black pepper, liquorice and brandy snaps."
