Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

Hailing from the rolling hills of the Italian island of Sicily, this ‘Indicazione Geografica Tipica’ Fiano has a straw yellow colour with fine greenish shades. It is dry and aromatic with peach and honey flavours and a subtle hint of almond blossom. On the palate it is lush and full bodied with lovely structure and mouth-watering acidity to finish. This wine pairs beautifully with seafood, creamy cheeses and pasta dishes.

Sourced from a single vineyard site in the Strathbogie Ranges, ideally suited to growing aromatic and balanced Pinot Gris. The cool nights here allow the fruit to reach optimum ripeness whilst retaining an elegant balance between flavour, alcohol and acidity. This wine by Pacha Mama underwent lees stirring while in barrel, resulting in a buttery richness and complexity that sets the pinot gris style apart from the tighter, more acidic Pinot Grigio. Rich and inviting nose with white musk, fresh quince and honeysuckle. A generous and textural palate, with flavours of crýme brulee, lemon zest and musk, balanced by refreshing acidity and a satisfying, clean finish.

Monte dei Cocci Fiano Minutolo is the result of traditional winemaking with a modern approach. The fruit is from the heart of Itria Valley in Puglia, grown at 450 metres. The Fiano Minutolo grape is highly aromatic and the wine produced displays flavours and aromas of flowers and sweet herbs with fresh yellow fruit.
