Silver Heights is Biodynamic winery. The Last Warrior Red grapes are 100% hand-picked and selected. Cold maceration, temperature-controlled fermentation, gentle and slow pressed. Aged in 70% French oak barrel and 30% stainless steel vats for 12 months. This wine flaunts fresh, ripe aromas of dark fruit (cherry, blackberry), it will also divulge a mix of further aromatic notessuch as hawthorn, mint and cigar. It has a lingering smooth finish.

Akashi-Tai Siraume Ginjo Umeshu

This is a special umeshu or plum liqueur because it steeps the ume plum in premium Ginjo sake made from Yamada Nishiki rice. The ume is steeped in the sake for six months then left to age for a further two years after the fruit is removed. The final liqueur is complex and finishes rich and long with characters of prune, honey and almond.

Ota Shuzo Dokan Umeshu

Ota Shuzo Dokan's Umeshu (plum wine) is a joyous drinking experience. Made with one year-old sake instead of soju, and then elevated with the maceration of ume plums and korizuta sugar, this wine manages to be highly drinkable and complex all at once.. Produced by a 5th generation samurai family, it's evident that the decades of precision and dedication have given Ota Shuzo Dokan the skillset to make the finest umeshu available in Australia. Not as sweet as other umeshu, this wine is perfect in cocktails or as a simple, solo treat, served cold over ice. Once opened the Ota 'Umeshu' will last well for at least 10 - 12 weeks, ideally in a refrigerator.
