With the addition of a touch of Cienna to the Prosecco, the sparkling wine retains its trademark acidity while showcasing a softer, rounder side to the palate. Single Vineyard high altitude Chardonnay from the King Valley is harvested in the early morning cool hours and pressed immediately to maximise the vineyards flavour. Full rich aromas of lemon and peach and gentle oak. The complexity of this Chardonnay is the result of partial barrel fermentation in new, French oak barriques, followed by stirring of the yeast lees for several months. Bursting with white peach, lychee and melon, the crisp finish and length of flavour define this wine.

Santa Margherita Prosecco di Valdobbiandene has a very fine, persistent bead and scents of apples and pears that act as a prelude to the flavors of ripe stone fruit with a bit of melon and orange. Fresh and lively with a long, dry, yeasty finish. Bargain.

Fred Pizzini grew up in Italy and is bringing the taste of his homeland to the Australian dining table. His Sangiovese is one of the best examples in the country, with spicy, savoury fruit hiding a vein of mouth watering acid that is a hallmark of the variety. Delicious now - and will get better with bottle age!
