This is a beautiful cool-climate style Cabernet Sauvignon that has gotten better with age and is now coming into its own in terms of style and drinkability. Hand picked and fermented in small open fermentres and then maturation for close to 20 months in French oak barrels has produced a lovely medium-bodied wine with all the clasic Cabernet characters of blackcurrent, red capsicum, roasted nuts, tobacco leaf and bouguet garni with fine tannins.

The Dagger has been deliberately honed to create a vibrant, rich, earlier drinking Pinot with all the red fruit plumpness of classic Pinot Noir. Drink young while the edge is keen.

GinGin. A clone from California, perhaps, but a wine with all of the hallmarks of the Jura. Golden to the eye with an open, slightly oxidative nose (think cashew nuts). Birthday Wine Cylinder “Hip Hip Hooray It’s Your Birthday”. Bleasdale's Adelaide Hills Pinot Gris grapes are grown by specialist Adelaide Hills growers. The fruit is handpicked directly into a refrigerated container where it is cooled all day, then delivered to the historic Bleasdale cellars at dusk for whole bunch pressing in the cool of the evening. This delicate wine shows all the spice and perfume we expect from cool climate Pinot Gris. Nashi, ginger and rosewater perfume leads to a generous and textured palate with nutty complexity from the barrel ferment component. A satisfying yet moreish wine, textured and complex middle palate, with a hint of sweetness to complement spicy foods.

Tasting Notes Aroma The bright and lifted nose shows pithy lemon & lime with orange blossom, melon and complex aromas of toasted almond and gun flint Palate Juicy melon and crunchy lemon zest with hints of brown lime and creamed citrus fruit palate.
