Wow what a fresh cool climate style Pinot Gris. Picked in the cool of the night from our Adelaide Hills vineyard we have produced a lovely medium bodied Pinot Gris with fresh acidity, textural and a wonderful mouth feel.The wine is from 2 blocks and 3 ferments with 1 batch having about 8 hrs of skin contact before pressing.The wine exhibits red apple, orange skin oils, nashi pear, quince paste, white florals and some lime acidity

Tim Knappstein became a third generation vigneron when he commenced his career in the family company, Stanley Wines, making his first wine in 1966, after graduating from the Roseworthy College Oenology course. Riposte, has enabled Tim to fully utilise his rich and accumulated knowledge from a decorated 45 years of wine-making, and his boundless enthusiasm to keep making exceptional well priced wine, from premium cool climate grapes of the Adelaide Hills. The Dagger has been honed to create a vibrant, rich, earlier drinking wine displaying all of the hallmark aromas flavours and texture of Pinot Noir.

Paracombe Chardonnay is a pale straw hued wine displaying light green tints. The attractive bouquet exudes mesmerising scents of fig and lemon soufflé, with light suggestions of minerality. The palate is delicate and structured, brimming with fresh flavours of peach, melon and creamy apple. These beautiful characters are supported by natural acidity, culminating the wine in a long, balanced and stylish finale. This wonderful Chardonnay tastes marvellous with crab cakes, pizza margherita and bay scallop chowder.

Riesling has a strong affinity for the cooler climes of the World, and it is therefore no surprise that it would produce wines of great character in the Adelaide Hills. Whilst we made the hard decision to graft some of our Riesling vines over to Pinot Noir some years back, we have retained only the most promising clones to produce our Riesling as its perhaps the top white pick amongst staff and remains a labour of love. The Riesling crop, whilst minuscule, showed hallmark varietal characters and fine acidity nurtured by the cool nights and warm sunny days. Careful sampling in the vineyard, paying particular attention to flavour development and acid levels, meant the fruit was harvested on the 14th of March when the ideal balance was reached. Lifted floral aromas and the lively citrus fruit intensity are finely balanced by the tight structure and crisp natural acidity.

The Adelaide Hills wine region is known for producing exceptional - quality chardonnay grapes that are intense in flavour and elegant in character. Wicks Estate in Adelaide Hills presented this great Chardonnay which is light straw - yellow in colour. It was created using grapes that were crop - thinned and leaf - plucked extensively by the growers so that superior - quality chardonnay grapes could be obtained from the vineyard. After compression was done and the juice was extracted from the fruit, it was poured into a select range of French barrels so that it could undergo barrel fermentation. The result was this richly flavoured wine that is bound to please most white wine lovers.

The Dagger has been deliberately honed to create a vibrant, rich, earlier drinking Pinot with all the red fruit plumpness of classic Pinot Noir. Drink young while the edge is keen.
