Benriach 35 Year Old Deluxe Single Malt Scotch Whisky

In 1898, John Duff built the Speyside Distillery, BenRiach. It is one of the few distilleries with its own on-site floor malting and draws its water from the Burnside Springs. Once distilled, the Benriach 35 Year Old Single Malt Scotch Whisky is filled into casks and allowed to mature on-site in the distilleries traditional, stone-walled, earthen-floored dunnage warehouse. This provides the perfect conditions for the whisky to age. The resulting whisky has aromas of luscious tropical fruit salad syrup with back notes of chocolate and mints. Bruichladdich Rare Series The Untouchable 30 Year Old Unpeated Single Malt Scotch Whisky

This landmark 1988 vintage from Bruchladdich has never been re-casked. It has matured over 30 years in the distilleries warehouses in the same wood it was originally filled into – refill bourbon and, unusually, rare refill squat hogsheads. The subtle influence of these refill oak casks has resulted in a delicate and measured relationship between spirit and wood, quietly cultivated over time. It was always understood that this small parcel of casks required no interference, no guiding hand; just a watchful eye and palate to see it through. It is definitive, old, Bourbon-aged Bruichladdich – some of the last of its kind. The resulting whisky has a polish copper colour in the glass. Floral aromas blend with sun dried hay, buttercups, primrose, and coconut oil. The palate is like a liquid velvet with citrus and coconut throughout. A classic Bruichladdich style, elegant and floral at first before allowing the oak to sweep in with pipe tobacco and fudge. A second sip brings some fruit, ripe pineapple, mango and hint of mint. This finish has mire marine elements from the maturation. A sea breeze with wood spice and fudge. One of the great vintages of Bruichladdich, the faith in the right wood and the right time to develop have allowed a superb spirit to show both its natural elegance and its strength of character.

Kirin Fuji Single Blended Masterpiece Japanese Whisky 700ml is a beautiful single blended whisky from the Fuji Gotemba distillery. They are one of Japan's most popular producers or grain whiskies. The natural environment around Mt. Fuji is blessed with lush forests, crystal clear water, and pure air. FUJI whiskies are delicately fruity and mellow, and have been nurtured over time in this environment, with its unique climate and terroir. Mt. Fuji Distillery is nestled at the foot of Mt. Fuji, 620 meters (2,035 feet) above sea level and 12 kilometres (7.5 miles) from its peak. Since this is a misty area, Mt. Fuji can only be seen about 1/3 of the year, despite being at such a close distance. The high humidity maintained by a year-round blanket of fog, a cool highland climate with a yearly average temperature of 13℃ (55℉), and air purified by the forests at the foot of the majestic mountain has been combining to form its climate and terroir around the distillery. This natural environment, the cool highland climate with moderate temperature changes and high humidity, is ideal for making whisky. Because of this climate and terroir, the whisk(e)y produced at Mt. Fuji Distillery is mellow, and delicately fruity on the palate. Water plays a vital role in high-quality whisky production. With excellent and abundant water being essential, we call its water “mother water,” meaning it is a blessing from Mother Earth. This excellent water source is one of the main reasons why Mt. Fuji Distillery was built at its location. The “mother water” is drawn from the aquifer that runs 100 meters (328 feet) deep underground, where snow and rain that falls on Mt. Fuji is filtered and polished for 50+ years to reach the aquifer. Master Blender Jota Tanaka is formerly of Four Roses Distillery, in fact the Barrels used at Fuji Gotemba are purchased from the same cooperage and the ex-bourbon barrels used for ageing some of the distilleries whiskies are from Four Roses as well. This single blended whisky has been produced using four different stills and includes both malt and grain all grown and produced at the distillery. The blend and includes whiskies up to 30 years old with an average age of over 15 years, there is also a small amount of peated whisky in the blend. The nose is heady with caramel, dark cherry, poached pears, honey and chocolate. The palate leads with sherry, stewed stone fruits and crisp rye spiciness lingering on the finish.

Philosophy: The journey from grape to bottle in Hennessy cognac production is a meticulous process involving several key stages. It all starts with the careful selection of Ugni Blanc grapes from the Cognac region, known for their high acidity and low alcohol content. In fact, A spirit that bears the Cognac Protected Appellation of origin (PDO) has to comply with regulated specifications, its grapes must be grown in Cognac, and the wine made from them produced here, defined by strict borders surrounding the Charente River. Seems pedantic but you can taste the difference. After harvest, the grapes are pressed, and the juice undergoes fermentation to become a low-alcohol wine. This wine is then distilled twice in copper stills, a crucial step that concentrates its flavours and aromas. Double distillation is required to make eaux-de-vie for cognac. In the first, a raw spirit called “brouillis” is produced. The second distillation produces a much higher alcohol content. Only the middle part, the ‘heart’, is saved. This clear, colourless liquid is called eaux-de-vie. It takes approximately 12kg of grapes to obtain 1 litre of eaux-de-vie. Pressing the grapes produces 9 litres of wine. The resulting eaux-de-vie is aged in French oak barrels, where it matures and develops complexity over time. Hennessy's master blenders then skillfully blend eaux-de-vie of different ages and characteristics to create the desired flavour profile for each cognac expression. Once blended, the cognac is aged further to allow the flavors to harmonise before being bottled. Aged in French Oak ex-Tawny barrels, this whisky embodies the coming together of Sullivans Cove Distillery and our powerhouse Australian fortified wine industry with rich flavours of Christmas spice, chocolate, and dark dried fruits. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel. Aged for 10 years, 5 months, in a 300 litre, French oak ex-Tawny cask, TD0409 is a classic example of the Sullivans Cove French Oak ex-Tawny style. Bottled unflocked and unfiltered at 47.1% abv this cask produced a mere 359 bottles. An array of rich fruit and flavour, heightened by sea spray characters that come so effortless to Sullivans Cove. TD0409 masterfully blends savoury undertones and firm oak structure. From the musky and forest floor notes to the juicy fruit-laden palate and lingering finish of mandarin and Madeira, TD0409 is tremendous. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Dates, Cacao Nibs, Orange Peel Vibrant and with aromatic oak presenting as antique furniture, incense, and Autumn leaves. As it opens in the glass, the spirit and ex-Tawny pre-fill come forward through the oak with a beautifully integrated array of fruity and briny notes: bonito flakes, blackberry syrup, orange pulp and more berries. Dates, cacao nibs, candied orange peel and fresh orange provide depth and carry a smooth transition to the palate. Palate - Peaches in Syrup, Vanilla, Bran Cereal Palate Very quickly characterised by a wave of tight tannin; Tawny and oak-forward for just a moment, and then an explosive, bright and juicy fruit profile presents peaches in syrup, orange cordial and raspberry jam. A divine vanilla syrup note mingles with a savoury base element (bran cereal, and bonito flakes again), as clove and aniseed point back to the spirit character. Rose, sticky date pudding and fruit mince pies linger on the back palate. Finish - Mandarin, Musk, Nutmeg A beautifully long and layered finish presents mandarin, musk and nutmeg.
