The grapesfor this wine were picked from our 40 year old vines grown in the volcanic soilof the ancient Fordwich Sill. These low yielding mature vines produce ripe, concentrated fruitwhich results in a wine with excellent regional and varietal characters.

Recognised as one of the first vineyards in the Hunter Valley, Audrey Wilksonson has a long and storied history in the region. They continue today to produce wines of region character with fine craftsmanship. Their Hunter Valley Shiraz is a wine in perfect harmony. Majority French oak is used to mature a wine that has flavours of intense cherries and violets overlapping powerful mulberry and that traditional Hunter character of forest floor and earth.

Pale yellow-green in colour with distinct cut grass notes on the nose.

A very appealing yellow/green tinted colour. Tropical aromas with plenty of primary fruit as a young wine. Minimal oak influence, of which adds a slight bran meal note. More tropical fruit on the palate, balanced by bright zesty acidity. An excellent and flavoursome Chardonnay.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. The classic and seamless blend has profusion of flavour and a refreshing crisp finish. Fish Cage wines are vibrant, fun and and easy escape. We are often asked, "Why is there a fish in the cage?" Lindeman's Early Harvest Crisp Chardonnay is a medium bodied wine with lively acidity and aromas of tropical fruit salads with subtle spicy vanilla oak undertone on the palate. It contains less alcohol and less calories than regular Lindeman's wines, yet still delivers the same outstanding Lindeman's quality.

Audrey Wilkinson Semillon from the home of Semillon in Australia, the Hunter Valley is a lovely crisp Semillon with abundant citrus fruit flavours, limes, lemons and a hint of sherbet. Delicious.

The Audrey Wilkinson Chardonnay shows layered peach, melon and citrus fruit flavours on the palate, both plush and textured, waves of exotic fruit are framed by a fine line of acid.

Produced from old low yielding Hunter Valley vines this Verdelho has lifted lychee lime and tropical fruit aromas and ripe spicy flavours with zippy acidity.
