Penfolds Bin 407 Cabernet Sauvignon has always been a fine mark for great quality Australian Cabernet at a price that is still within reach. When you match that with Dan Murphy's ability to cellar this magnificent wine in our climate controlled cellars you have an opportunity to good to miss. While the 2007 was a difficult year for most in South Australia, Penfolds are in the lucky position of being able to select from a wide array of regions and vineyards to find the best Cabernet expression possible. A more medium weighted 407 than usual, this vintage show finesse and grace that will reward for a decade or more to come.

Tyrrell's Vat 8 is the archetypal blend of tradition and modernity. With a strong history in both the Hunter Valley and Hilltops regions, Tyrrell's are able to showcase the very best in modern Australian winemaking. The Vat 8 consists of a majority Hunter Valley Shiraz the lends beauty, flavour and ripeness and a small parcel of Hilltops Cabernet which supports the Shiraz with power and structure. Elegant and pristine early, this is a wine that will enjoy some time in the cellar to further develop it already obvious complexity.

On the nose: Ripe dark fruit, a hint of mint, toasty oak and cedary development.On the palate: Intense black fruit power melding well with deluxe mocha oak a rich, dense and complex reserve style with tight, grainy tannins and spicy acidity.

Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

Xanadu Reserve Cabernet Sauvignon is vibrant and robust with great balance from the bouquet of ripe forest fruits and violet on the nose; A refined structure of tannins, oak use and the acidity on the palate; All are great indications of a wine that would benefit from careful bottle maturation for many years to come.
