Our Heritage Cabernet Sauvignon is the culmination of an intensely detailed approach to our vineyards and grape selection. From our vigour and soil mapping techniques to the identification of select parcels and hand harvesting bunch by bunch, we ensure gentle handling through every stage of production. The nose is bursting with classic varietal aromas of blackberry, black cherry, and plum, layered with floral notes, liquorice, and dried herbs. On the palate, juicy redcurrant and cassis are complemented by dried rose petals and nori, with firm yet elegant tannins that promise both immediate appeal and long-term potential.

While the estate known as Chateau Haut-Bailly dates back to 1461, its wine production began in 1530, falling into the hands of the de Leuvarde and Le Bailly families in 1630. It was purchased in 1998 by Robert G Wilmers, a Harvard-educated banker, and his French wife Elisabeth and under their care, the estate has begun producing some of the best wines in its history. The cellars and production procedures were renovated and modernised and this year, the Chateau itself was awarded government recognition of its cultural and vinious heritage.

In 2012 Clarendon, and the stately sandstone house on the property, was purchased by Jackson Family Wines; it is run as a separate business from Yangarra Estate Vineyard, with different winemaking teams and wines. The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.

Blackcurrants, cherries, dried cranberries and Satsuma plums feature on the nose at the forefront. Bay leaf, cinnamon, cardamon, cedar and clove combine with heightened lavender notes and hints of fresh tobacco. The palate is fine with a mineral thread. It is elegant and delicately layered. Blackcurrant and cherries feature again with a subtle cassis edge. The mid palate has supple flesh with cocoa, coffee bean and cassia leading to a graphite line and powdery tannins.

There's a lot to adore about this Cabernet Sauvignon from a beloved family-owned winery. Halliday deemed it worthy of 92 points, and it's picked up four gold medals from Australian wine shows. But if that pedigree doesn't impress you, one sip of this beautiful red will.

In the glass: Medium to deep red black. On the nose: Full of bright red cherry with hints of red olive and fine oak spice. On the palate: Quite a jubey and appealing red fruit core giving long and silken flavours that are generous and classy. Fine oak gives subtle support throughout. Lovely now yet with good mid-term potential.

In the winery: Matured for 20 months in new French barriques, Hungarian, French and American hogsheads. In the glass: Inky dark red. On the nose: Ripe dark fruit, a hint of mint, toasty oak and cedary development.On the palate: Intense black fruit power melding well with deluxe mocha oak a rich, dense and complex reserve style with tight, grainy tannins and spicy acidity.
