Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. The wines are made by the dedicated team led by chief winemaker Janice McDonald. Black and blue berries, red currants, plum compote and roasted chestnuts mingle with coffee, cocoa and hallmark Cabernet minty earthiness to create a quite beautiful wine.

Swings & Roundabouts Rosé is a beautiful blend produced by the fusion of 59% Malbec with 12.5% Sangiovese and 28.5% Tempranillo grapes. These luscious fruit parcels were picked in the cool of the night and chilled with skin contact. The juice obtained by cold pressing was fermented and then bottled. The resulting blend features a pale coral pink hue. Fresh aromas of spicy fruits fuse with light bramble notes to flaunt a fragrant bouquet. The fruity and vibrant palate packs juicy tropical fruit flavours, supported by crisp and sparkling acidity. These enticing characters provide a soft texture, culminating the wine in a lively and persistent finish. Made for consumption upon release, this magnificent Rosé tastes lovely with ham hock croquette with herb aioli and goat cheese.

Aromatic and brightly fruited, Stella Bella Cabernet Merlot shows ripe cassis fruit, savoury dried herbs and well-integrated cedary oak. Elegant and fruit pure with supple fine-grained tannins it is a benchmark example of Western Australian Cabernet Merlot.

This stunning blend combines Cabernet with its dark fruits, bright cassis, hints of dried herbs whilst the Merlot subtly brings plush blue fruits and warmth, surrounded by supple tannins and neatly integrated oak.

Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Viticulture This Cabernet Sauvignon was grown in the Wilyabrup sub region of Margaret River. The canopy management is a vertical shoot position trellis with a north south facing aspect. The clonal selection is the popular Houghton selection Cabernet Sauvignon. Soil types are typically sandy loam over free draining lateritic sub soils. 2021 is typified by a cool and mild growing season which has culminated in wines of delicacy and poise. Winemaking The fruit was picked on the 11th April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static fermenter for a further 13 days of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 9 months before bottling. A unique expression of the Margaret River, Deep Woods Hillside Cabernet Merlot exhibits aromas of cassis and dried herbs. The palate is a rich mixture of red and black berries and is medium bodied with elegant silky tannins. Great length with a touch of sweet spice and dark chocolate notes.

Our first Cabernet Merlot was produced in 1982. We have always felt that the Merlot grape variety enhanced the Cabernet and in this case at 29%, the Merlot is more than a bit player. Indeed tasters sometimes suggest that the Merlot is dominant, with its velvety, rounded character. Merlot extends the flavour, enhances the finish and performs in a very positive fashion.
